Punjabi Mutton Biryani

Ingredients:
mutton 1/2kg
onions 3 big
ginger paste(2 table spoon)
garlic paste ( 2 table spoon)
cloves, moti elachie, dalchini , black pepper, bay leaf,
salt (acc to taste)
gram masala 1 small tea spoon
red chillie powder (acc to taste)
mutton masala ( 1 tea spoon)
dhaniya powder( 1 tea spoon)
ghee (1 table spoon)
rice 1 big glass

Method:
First wash the mutton nicely and then put the mutton in a pressure cooker and add onions cut into 4 and then add garlic pieces not chopped and add salt and pressure cook for an hour until unless the mutton is nicely cooked . On the other side in a big pan abb a big karchi ghee let it heat for some time and then add cloves, black pepper, moti elachie, bay leaf, and add dalchini stick. let it heat and then add ginger garlic paste and let it fry and then add just the boiled onion and mutton mixture not the water only the mutton and let it cook and bhuno it nicely add salt , pepper, red chillies, garam masala ,mutton masala and then add rice and double amount of water ( the mutton water) and let it all remain soaked for about 1 or 2 hours. then cook it . then serve with green chutney and curd.

Jaggery Recipe

Ingredients:
Jaggery(Guud);
Water for boiling;
Cardamom powder;
Wheat flour powder

Method;
1.Heat Jaggery,water,Elaichii powder in water and all becomes thick liquid.
2.Then dough the all mixture with wheat flour powder.It will be sweet flavored dough.
3.Now make small dumplings and fry in oil till it becomes light pink.

Makki Doodhi Ra Moothiya Recipe

Ingredients

For Moothiya:-
1. Thinly sliced bottle gourd (25gms)
2. corn flour (250 gms)
3. finely chopped coriander leaves (1/2c)
4. fresh corn seeds (100gms)
5. thickly chopped bottle gourd (50gms)
6. fennel (1/4tsp)
7. oil (15ml)
8. water
9. cumin seeds (1/4tsp)
10. crushed coriander seeds (2-3gms)
11. salt (to taste)
12. ajwain (2-3gms)
13. green chilies (2tbsp)

For Gravy:-
1. Finely chopped onions (1c)
2. cumin seeds (1/4tsp)
3. cardamom (2pieces)
4. whole black pepper (3-4)
5. cinnamon (1stem)
6. ginger-garlic paste (2tsp)
7. cloves (3pieces)
8. cassia leaf (1 piece)
9. vegetable oil (2tbsp)
10. javtri (a pinch)
11. fenugreek seeds (1/4tsp)
12. coriander powder (1/4tsp)
13. garam masala (1/4tsp)
14. turmeric powder (a pinch)
15. curd (50 gms)
16. red chilli powder (1/4tsp)

Method of preparation:-
1. For Moothiya:- Take a large bowl, add bottle gourd, ajwain, fennel, green chilies, corn flour, corn seeds, cumin seeds, oil, finely chopped coriander leaves, crushed coriander seeds, green chilies. Mix all these ingredients by adding water in it to make dough.

2. Squeeze the dough with your hands to make dumpling and then boil them in water. Drain them and then fry in oil for about 2 minutes. Drain the moothiya and cut them in pieces. Then soak them in water until they get soft. Now moothiya is ready.

3. For gravy: — Take a pan, place it over heat. Heat oil in it and fry the cumin seeds in it and then add onions, ginger- garlic paste, clove, cassia leaf, whole black pepper cardamom, cinnamon in it. Saute onions until they get soft.

4. Add red chilli powder, coriander powder, turmeric powder in it. Take curd, add salt in it and then put it in the pan and cook it for sometime. Add water, fenugreek, javitri and garam masala in it and cook it for about 10 minutes.

5. Now the gravy is ready and adds the moothiya in it. Now the dish is ready. Garnish it with juliennes of ginger, fried red chilies and chopped coriander leaves. Serve it hot with rice.

Broccoli Cheese and Bacon Salad Recipe

Ingredients
1. Bacon slices (6 to 8)
2. shredded cheese of any kind (1c)
3. broccoli (1 to 2 bunches)
4. nuts or sunflower seeds (1/2c)
5. red onion (1/3c)
6. raisins (1/2c)

For dressing:-
1. Sugar (2 to 4 tbsp)
2. vinegar (1/4c)
3. mayonnaise (1c)

Method of preparation:-
1. Take a pan, place it over heat. Fry bacon slices in it until they get crispy and crumble. Keep it aside. Take broccoli flowerets, cut them into very small pieces. Cut up about 4 cups of broccoli flowerets and put them in a salad bowl. Add onion, nuts, raisins and cheese in salad bowl.

2. Prepare the dressing mixture in a bowl by mixing mayonnaise, sugar and vinegar in a bowl. Now pour the dressing in salad bowl.

3. Mix the salad and then keep the bowl in the refrigerator for about 2 to 3 hours. Then add the crumbled bacon in the salad and mix it again. Now the salad is ready to serve.

Sprout Pizza Recipe

Ingredients
1. Moong sprout (1c)
2. Pizza base (2)
3. refined (1tsp)
4. blanched tomatoes (6)
5. amul cheese cube, grated (2cubes)
6. ajwain (1 1/2tsp)
7. freshly ground pepper (1 1/2tsp)
8. salt (to taste)
9. butter (for greasing)
10. chili and tomato sauce (2tsp)
11. finely chopped onion and capsicum

Method of preparation:-
1. Take a pan, heat refined in it and then add ajwain in it. When the ajwain gets crackle then add capsicum and onions in it. Fry them for about 2 minutes and then add moong sprouts, tomatoes, salt and pepper in it. Cover the pan and cook it until the moong gets soft but crunchy.

2. Take off the pan from heat and keep it to cool. Take pizza bases, apply butter on it and then spread the moong mixture over it. Put tomato and chili mix on it and then spread the grated cheese over it. Now dust some pepper over it.

3. Take a greased tray, place the bases on it and cook them on micro low for about 5 to 7 minutes until the cheese gets melted. Now the pizza is ready to serve.

Deluxe Pizza Recipe

Ingredients

For Crust:-
1. All purpose flour (3c)
2. sugar (1-1/2tsp)
3. parsley flakes (2tsp)
4. salt (1tsp)
5. olive oil (2tbsp)
6. warm water (1 1/2c)
7. active dry yeast (1package)

For Toppings:-
1. Shredded cheese of your choice (12ounces)
2. diced cooked turkey bacon (4 to 6 ounces)
3. sliced pepperoni (6ounces)
4. diced sweet onion (1small)
5. drained mushrooms (1can or 6 ounces)
6. diced banana pepper (1)
7. drained diced tomatoes (1can or 14 ounces)
8. pizza sauce (1can)

Method of preparation:-
1. First heat the oven to 425 degrees F. Take warm water in a bowl and then dissolve the yeast in it. Mix all the other ingredients of crust in it. Beat this mixture and then keep it for about 5 minutes.

2. Take pizza pan, grease it with olive oil and then press the dough on pizza pan with your hands. Now place the pizza pan in oven and bake it for about 12 to 15 minutes at 425 degrees f until the crust gets lightly brown.

3. Take out the pan from the oven and then decorate it with toppings. Now the deluxe pizza is ready to serve. Enjoy it with pizza sauce.

Super Healthy Pizza Recipe

Ingredients
1. each strong white flour and strong wholewheat flour, plus extra for dusting (100g/4oz)
2. warm water (125ml/4fl oz )
3. easy-blend dried yeast ( tsp or 7g sachet)
4. salt (a pinch)

For Topping:-
1. Capers in brine, drained (1tsp)
2. cherry tomatoes, halved (handful)
3. mozzarella, torn into pieces (25gms)
4. chopped tomatoes, juice drained (1can about 200gms)
5. courgette, thinly sliced using a peeler (1large)
6. chopped parsley (2tbsp to serve)
7. olive oil (1tbsp)
8. finely chopped garlic clove (1)
9. roughly chopped green olives (8)

Method of preparation:-
1. Take a food processor fitted with dough blade; add flours, yeast and a pinch of salt in it. Add enough water in it and then process it for 1 minute to make dough.

2. Take out the dough from the food processor and roll it on the lightly floured surface to a circular shape. Then place the rolled dough on oiled baking sheet.

3. Take canned tomatoes, spread them over the dough. Place the courgettes and cherry tomatoes over the top. Then spread the mozzarella over it.

4. Take a bowl, mix garlic, olives and capers in it and then spread them over the top. Sprinkle oil over it. Keep it aside for about 20 minutes to rise.

5. Now heat the oven to 240c/fan 220c/gas 9. Place the baking sheet in oven and then bake it for about 10 to 12 minutes until the pizza gets crispy and golden from the edges. Now the pizza is ready, spread chopped parsley over it to serve.

Tricolor Pizza With Basil Oil Recipe

Ingredients
1. Mixed tomatoes, sliced and drained (225gms)
2. Ciabatta bread mix, plus a little extra for dusting (175gms from 500gms pack)
3. basil leaf (large handful)
4. reduced fat mozzarella (125gms ball)
5. splash lemon juice
6. halved and thinly sliced avocado (1)
7. olive oil (3tbsp)
8. warm water (125ml)

Method of preparation:-
1. First heat the oven to 240c/fan 220c/gas 9. Take a large bowl, put the bread mix in it and then add 1 tablespoon of olive oil and 125ml of lightly warm water. Mix it well to make dough.

2. Knead the dough well and then put it in oiled bowl. Cover the dough and place it in warm place for about 15 minutes to rise. Meanwhile take a small blender, put the left over oil and add basil leaf in it. Now blend it until the leaves get finely chopped.

3. Mix the avocado in lemon juice and roughly cut mozzarella. Now take a baking sheet, roll dough into 25*30cm rectangular shape on the sheet. Apply the basil oil over it and then spread the tomato slices and mozzarella on it.

4. Place the sheet in oven and bake it for about 10 to 12 minutes until the cheese gets melted and the base gets crispy. Now the pizza is ready to serve, decorate it with avocado slices and basil leaves.

Quickest Ever Pizza Recipe

Ingredients
1. Ciabatta, halved length ways (1)
2. mozzarella, torn (125gms)
3. dried oregano (1tsp)
4. tomatoes and basil sauce (6tbsp)
5. chorizo, roughly chopped (50gms)
6. olive oil

Method of preparation:-
1. First heat the grill. Take a baking tray, place the ciabbatta on it. Then spread the tomato and the basil sauce over it. Take mozzarella, oregano and chorizo and spread them over the sauce and then sprinkle the oil over it.

2. Now place baking tray on grill and grill it for about 3 to 4 minutes until it gets bubbling and changes its color to brown. Now the pizza is ready to serve. Cut it into slices and serve it.

Potato and Taleggio Pizza Recipe

Ingredients
1. New potatoes (300gms)
2. taleggio cheese (175gms)
3. white bread and pizza base mix (280gms pack)
4. spring onions (4)
5. smoked lardon (100gms pack)
6. olive oil (a litttle)

Method of preparation:-
1. First heat the oven to 220c/fan 200c/gas 7. Then prepare the dough according to the instructions of package. Knead the dough and then roll it thinly into rectangular shape about 30*40cm.

2. Take a baking sheet, place the rolled dough on it. Cover the dough and then keep it aside for about 20 minutes to rise. Take potatoes, cut them into thin slices and then boil them in salted water for about 3 to 4 minutes until they get soft.

3. Then drain the potatoes and then pat dry them. Take spring onions and shred them and then cut the cheese into thin slices. Now place the potatoes over the pizza dough and then sprinkle a little olive oil over the potatoes.

4. Spread the lardon, onions and cheese on top. Place the pizza dough in oven and bake it for about 15 to 20 minutes until the pizza changes to golden brown in color and gets crispy. Take out the pizza from oven and cut it into squares and then serve it.
