Lemon Cupcake Recipe
Ingredients
Self raising flour (1/3c), softened butter (90gms) softened cream cheese (90gms), superfine sugar (2/3c), finely grated lemon lemon rind (2tsp), all purpose flour (1/2c) and eggs (2).
Method of preparation:-
First heat the oven to 160 degrees c. Take 12 cupcakes, line them with cupcake papers. Take a bowl, beat butter, lemon rind, cheese, sugar and eggs in it until it gets smooth and creamy. Sift the two flours in a bowl and mix in the cream mixture. Now beat it properly. Divide the batter in cupcakes and place them in preheated oven and then bake them for about 20 minutes. Keep them to cool for few minutes and then finally place to wire rack.
