Gajar Kanji Recipe
Ingredients
1. Carrots (4large)
2. coarse, red chili powder (1 1/2tbsp)
3. coarse mustard powder (4tbsp)
4. beetroot (1med.)
5. salt (to taste)
Method of preparation:-
1. Take carrots and beetroot and scrub them and then wash them under running water. Then peel and cut them into batons.
2. Take a bowl; put the carrot and beetroot batons in a bowl. Add coarse mustard powder, coarse red chili and salt and then mix them. Add the 18 cups of water and stir it.
3. Cover the bowl with a muslin cloth and then tie it round the rim. Keep it in the sun for 3 to 4 days. When the gajar kanji gets ready then keep it in the refrigerator and serve it chilled in the serving glasses.
Cooking time – 3 to 4 days
