Mini Cheese Omelettes with Tomato Sauce Recipe

Ingredients
1. Beaten eggs (6)
2. Sliced into thin sticks, mozzarella cheese (200gms)
3. butter (3tsp)
4. finely chopped onions (1)
5. finely chopped tomatoes (300gms)
6. freshly grated parmesan cheese (2tsp)
7. olive oil (3tsp)
8. salt and freshly ground pepper (to taste)
9. garlic (3flakes)

Method of preparation:-
1. First heat the oven to 200 degrees C. Take a bowl, whisk eggs with salt and freshly ground peppers.

2. Take a pan, heat ¼ teaspoon of butter in it. Pour a little of the beaten eggs into the pan and then make a thin omelette of it. Cook the omelette until it is cooked from both sides and then put it on a plate.

3. Make more omelettes in the same way until the egg is used. Make about 8 omelettes. Divide the mozzarella cheese among omelettes, roll them up and then place them in oven proof dish.

4. Heat olive oil in the pan, fry garlic and onions in oil until get soft. Add tomatoes and keep them to simmer for about 15 minutes. Mash the tomatoes well.

5. Now pour the sauce over the omelettes, sprinkle the parmesan cheese and then bake for about 10 minutes. Now it is ready to serve. Serve it with salad and crusty bread.
