Cauliflower and Brinjal Curry Recipe

Ingredients
1. Brinjal or baigan (2 number of slices)
2. cauliflower florets (1/2kg)
3. chopped tomato (1)
4. peas with pod (1c cut into 1 inch pieces)
5. chopped coriander leaves (a bunch)
6. green chillies (4)
7. cumin seeds (1/2tsp)
8. salt (to taste)
9. oil (2tbsp)

Method of preparation:-
1. Take cauliflower florets, wash them and cook them in a pan until they get soft. Take off the pan from heat and keep it aside.

2. Take another pan, heat oil in it and then add sliced brinjal in it. Cook them for about 5 minutes over low heat. Add pea pods in it and fry them for about 2 minutes and then add tomato in it.

3. Now add cauliflower florets into the pan. Then add salt according to taste in it. Mix it and then add the ground masala in it. Fry it for few minutes. When the cauliflower and brinjal curry gets ready then serve it hot with roti or rice.

Khakra Recipe

Ingredients
1. Flour (2c)
2. salt (2tsp)
3. kasoori methi (1c)
4. ajwain (4tbsp)
5. red chilli powder (2tbsp)
6. ghee (6tbsp)

Method of preparation:-
1. Take a bowl; add flour, ajwain and kasoori methi in it. Mix it and then add ghee, salt and red chilli powder in it. Add enough water in it to make dough.

2. Knead the dough to make it soft and then keep it aside for about half an hour. Take dough and make the patties from it.

3. Take tortilla maker, place the patties in it and then close its lid. Keep it for sometime until the patties get crispy. Then take out them from the tortilla maker and serve this traditional Gujrati snacks with chutney.

Khattai Aalu Recipe

Ingredients
1. Floury potatoes (1/2kg)
2. brown sugar or shakkar (1tbsp)
3. turmeric powder (1/2tsp)
4. coriander powder (1tsp)
5. desiccated coconut (2tbsp)
6. cumin powder (1/2tsp)
7. salt (to taste)
8. green chillies (2slices)
9. oil (1tbsp)
10. red chilli powder (1/2tsp)
11. mustard seeds (1/2tsp)
12. tamarind pulp (2tsp)

Method of preparation:-
1. Take potatoes, peel them and cut them into pieces. Mix the sugar in liquid.

2. Take a pan, heat oil in it and then fry mustard seeds in it until they get splutters. Then fry chili, cumin powder and coriander and turmeric powder in it. Now add the dice potatoes, mix them and then add salt and a little water in it.

3. Reduce the heat to low, cover the pan and then cook it for about 15 minutes. Then add chili powder, coconut and tamarind juice in it and mix it well. Again cover the pan and cook it until the potatoes get cooked. Then serve these khattai Aalu with chapatti or rice.

Patra Bhajia Recipe

Ingredients
1. Patra or colocasia leaves (15 to 20)
2. gram flour or besan (1c)
3. oil (1tbsp)
4. salt (to taste)
5. crushed cumin seeds (1tsp)
6. turmeric powder (1/2tsp)
7. tamarind extract (1/2c)
8. chilli powder (3tsp)
9. asafoetida (3 to 4 pinches)
10. powdered sugar (3tsp)

For Seasoning:-
1. Finely grated coconut (1tbsp)
2. finely chopped coriander leaves (1tbsp)
3. cumin seeds (1/2tsp)
4. sesame seeds (1tsp)
5. mustard seeds (1/2tsp)
6. oil (1tbsp)

Method of preparation:-
1. Take colocasia leaves, clean them, wash them and then pat dry them. Use scissors to cut their thick vein. Then lightly roll them and keep them aside.

2. Take a bowl; mix all the ingredients in it to make thick paste except the ingredients of seasoning. Take leaf place it on flat surface with downside up. Take paste mixture, spread it over the leaf.

3. Then place one leaf over it. Set 3 to 4 layers of leaves. Then roll the leaves. Make tight rolls and then seal them from the sides. Then place these rolls in the perforated vessel of steam cooker and then steam them for about 30 to 40 minutes until they get cooked. Keep them to cool and then cut them into slices.

4. Take a pan, heat oil in it. Add seeds and keep them to splutter and then add coconut, sesame and coriander in it. Add chilli, salt and sugar according to taste. Mix it well and then serve it.

Potato Wada Recipe

Ingredients
1. Potatoes (225gm)
2. oil (for deep frying)
3. Soda bi-carb (A pinch)
4. salt (to taste)
5. garam masala (1/2tsp)
6. green chillies (2)
7. ginger (5gms)
8. coriander leaves (1/2bunch)
9. gram flour or besan (100gm)
10. onions (30gm)
11. garlic cloves (2)
12. turmeric powder (1/2tsp)

Method of preparation:-
1. Take potatoes, boil them in pressure cooker. When they get boiled then keep them aside to cool and then peel them.

2. Take a bowl, mash the potatoes in it and mix salt, chopped onions, ginger, green chillies, garlic, garam masala and coriander leaves in it. Make balls of it. Now make the batter by mixing besan, turmeric, salt, soda and water so that a thick consistency can be made.

3. Take a frying pan, heat oil in it for frying. Dip the balls of potato mixture in besan batter and deep fry these balls. Take out them from the pan after frying and serve them hot with chutney or sauce.

Raab Kanji Recipe

Ingredients
1. Wheat flour (1tsp)
2. dried ginger powder (1tsp)
3. water (1/2c)
4. ghee (1/2tsp)
5. cardamom powder (1tsp)
6. jaggery (1tsp)
7. milk (1c)

Method of preparation:-
1. Take a pan; place it over heat and then temperate ghee in it over low heat. Add wheat flour in it and fry it until it gets pinkish in color.

2. When the flour gets fried then adds milk and water in the pan and then mix dried ginger powder in it. Mix it and add jaggery in it. Mix it properly.

3. Now take off the pan from heat. Dust cardamom powder on it and then serve it hot. This recipe is good after illness.

Trevti Dal Recipe

Ingredients
1. Tuvar dal (1/4c)
2. moong dal (1/4c)
3. chana dal (1/4c)
4. chopped onion (1)
5. chopped garlic cloves, minced (3)
6. chopped tomatoes (1)
7. ginger (1/2inch)
8. oil (2tbsp)
9. lemon juice (1tbsp)
10. oil (2tbsp)
11. turmeric powder (1 pinch)
12. chopped coriander leaves (3tbsp)
13. salt (to taste)
14. water (2c)

For seasoning:-
1. Bay leaves (2)
2. dry red chilies (2)
3. asafoetida (a pinch)
4. broken cloves (2)

Method of preparation:-
1. Take all dals, wash them and then soak them in water for about 1 hour. Cook the dals in the pressure cooker and then keep it aside.

2. Take a pan, heat oil in it and then fry the chopped garlic, ginger and chillies in it for about 4 to 5 minutes. Add tomatoes, onions, turmeric powder and salt in it and cook them.

3. Smash the dals add it in the pan and then add 2 cups of water. Reduce the heat to low and keep it to simmer for few minutes. Add coriander leaves and lemon juice in the dal and mix it. When the trivet dal gets cooked then serve it hot with rice.

Sev Ganthia Saag Recipe

Ingredients
1. Ganthia or sev (1c)
2. red chillli powder (1/2tsp)
3. sugar (1/2tsp)
4. oil (1tbsp)
5. finely chopped coriander leaves (1/2tbsp)
6. dhania powder (1/4tsp)
7. amchoor (1/4tsp)
8. asafoetida (2 -3 pinches)
9. garam masala (1/4tsp)
10. cumin seeds (1/2tsp)
11. water (1c)

Method of preparation:-
1. Take a bowl, add all dry masalas in it and then add 1 cup of water. Mix them well.

2. Take a pan, heat oil in it. Fry cumin seeds and asafoetida in it. When the seeds get splutter then add masala mixture dissolve in water. Keep it to simmer for about 3 to 4 minutes. Add sugar in it and mix it.

3. Now add sev or ganthia. Cook it by stirring. When it gets cooked then sprinkle the chopped coriander on it to garnish it. Serve it hot with roti or phulka.

Curds and Corn Curry Recipe

Ingredients
1. Corn cobs (2 tender)
2. green chillies (4)
3. beaten curds (1c)
4. ginger (1inch piece)
5. garam masala (1/2tsp)
6. cumin seeds (1tsp)
7. dhania jeera powder (1tsp)
8. chilli powder (to taste)
9. salt (to taste)
10. turmeric powder (1/2tsp)
11. coriander leaves (a few sprigs)
12. water (1c)
13. oil (3tbsp)

Method of preparation:-
1. Take ginger and chillies, grind them in a grinder. Take a bowl, add curd in it and beat it with 1 cup of water until it gets smooth.

2. Take corn and finely grate it. Take a pan, place it over heat. Heat 3 tablespoon of oil in it. Then fry cumin seeds in it. When the seeds get splutter then add corn in it and fry them for about 5 minutes by stirring them. Add ginger paste, salt and all the spices in it.

3. Mix it well and cook it. Now add curd in it. Cover the pan and keep it to cook until the corn gets cooked. When the corns get cooked then sprinkle the chopped coriander leaves on it and serve it hot.

Black and White Pizza Recipe

Ingredients
1. Baked pizza crust (1about 12 inch)
2. prepared Alfred sauce (1c)
3. frozen chicken breast strips, thawed (1package about 6 ounce)
4. dried parsley (1tsp)
5. sliced jalapeno peppers (1can about 4 ounces)
6. shredded mozzarella cheese (1package about 6 ounces)
7. canned black beans, drained (1/2c)
8. minced garlic (1/2clove)
9. extra virgin olive oil (1tbsp)

Method of preparation:-
1. First heat the oven to 450 degrees f. Take a frying pan; place it over medium low heat. Heat olive oil in it and then add garlic in the pan and cook it. Now add chicken strips in it and cook them.

2. Take pizza crust, spread the Alfred sauce over it and then dust the shredded cheese over it. Now place the garlic and chicken strips over the cheese and then spread the black beans over it.

3. Take jalapeno slices, place them over the beans and then cover them with left over cheese. Dust the dried parsley flakes to decorate the pizza. Now place the pizza on oven rack. Bake it for about 15 minutes until the cheese gets melted and crust gets crispy.
