Doi Mach Recipe
Ingredients
Fish pieces (5), oil (for frying), ginger (1large), curd (5tbsp), onion (1large) and turmeric powder (1tsp), red chili (to taste), chopped green chilies (2), salt (to taste), cardamom powder (4tsp), cumin seeds powder (1tsp).
Method of preparation:-
Take onion, peel it, chop it and then grind it to make the paste. Now make the paste of ginger. Take fish pieces and wash them and then apply the turmeric powder and salt to the fish pieces. Take a pan, heat oil in it. Fry cardamom powder, cumin seed powder, onion paste and ginger paste in it. Then add fish pieces in it and fry them until they gets cooked. Now add chopped green chilies and curd in it. Cook it over medium heat until it gets cooked properly. Now the dahi mach is ready to serve. Serve it hot with rice.

Dhoka Dalna Recipe
Ingredients
Cholar Dal, chana dal, Bengal gram (1c), green chilies (2), tomatoes (2medium), coriander powder (1tsp), cumin seed powder (1tsp), cumin seeds (1tsp),grated ginger (1tsp), oil (2 to 3 tbsp), ghee (1tsp), asafoetida (1tsp), salt (to taste), garam masala (1/2tsp), chili powder (1tsp), turmeric powder (1/2tsp).
Method of preparation:-
Take Bengal gram dal, wash it and soak it in water for about 4 to 6 hours. Drain water the dal and then make the paste of it by grinding it in a grinder. Take a pan, place it over heat and then heat oil in it. Add cumin seeds, ginger paste, asafoetida, salt and turmeric powder in it. Now cook the grounded dal in it until it gets soft. Take a dish, grease it with oil. Spread the cooked dal on the dish and lightly press it with spatula. Keep it to cool and then cut it into diamond or square shapes. Heat the oil in pan and then fry the dhokas in it until they turn lightly brown in color. Then keep them aside. Take a grinder, put tomatoes, green chilies, ginger, coriander powder, chili powder, cumin seeds and turmeric powder in it and grind them to make puree. Take a deep and heavy pan, place it over heat. Heat oil in it and add cumin seeds in it and then sauté puree in it. Then add water and salt in it and then keep it to simmer for about 4 to 5 minutes. Now add the fried dhokas and keep the curry to boil. Reduce the heat to low and cook the dhokas. Add garam masala and ghee in it . Now take off the pan from heat and serve the dish hot with rice.

Chingri Macher Malai Curry recipe
Ingredients
Jumbo prawns, dressed and marinated in lime juice for about 45 minutes (4), grated coconut (20gms), poppy seeds (1tsp), cashew nuts (50gms), coconut milk powder (2tsp), milk powder (1tsp), onion (1medium size), raisins (1tbsp), red chili powder (a pinch), cumin seeds (1tsp), salt (1tsp), turmeric powder (1/2tsp), mustard oil (5tbsp).
Method of preparation:-
Take marinated prawns; wash it to take out its sour taste. Take a pan, place it over heat. Heat oil in it and fry the prawns in it by stirring constantly. Take a bowl, put the fried prawn pieces in it and keep it aside. Make the paste of all ingredients except the grated coconut in a blender by adding some water if needed. Sauté the paste in the same pan for about 5 to 8 minutes until the color of the paste changes to brownish. Now put the fried prawns in the pan and mix them. Then grated coconut and water and then mix it well. Reduce the heat to low, cover the pan and keep it to cook for about 10 minutes. Take off the pan from heat and decorate the dish with grated coconut and raisins. Serve it hot with rice.

Chicken Rezala Recipe
Ingredients
Chicken (1whole), sour curd (100gms), keora water (1/2c), garam masala (2tsp), garlic paste (3tsp), ginger paste (2tsp), wheat flour (1tbsp), white oil (4tbsp), onions (4), red chili (8), water (as needed), salt (to taste), peppercorns (10), bay leaves (2), ghee (2tsp).
Method of preparation:-
Take chicken, wash it and cut it into pieces. Take a pan. Place it over heat. Heat oil in it and add bay leaf, peppercorns and garam masala in it. Add chicken pieces in it and fry them with masala by stirring it. When the water in the chicken gets absorbed then adds garlic, ginger and onion to it and cook it well. Add the mixture of curd, flour and salt to it and mix it well. Now add keora water in it and cook it for about 10 minutes. Now heat ghee in a pan and add red chili in it and then mix it in the chicken. When the dish gets ready then serve it hot.

Bangla Khichdi Recipe
Ingredients
Rice, washed and soaked for 30 minutes (1c), channa dal, washed and soaked for 30 minutes (1tbsp), Masoor dal, washed and soaked for 30 minutes (1c), cumin seeds (1/2tsp), cinnamon stick (1 inch), bay leaf 91), peeled tiny onions (10 to 12), green cardamom (3), cloves (3), grated ginger (1tsp), shelled peas (1/2c), washed and clean baby potatoes (10 to 12),diced carrot (1), grated garlic (1tsp), turmeric powder (1/2tsp), finely chopped green chilies (3 to 4), water (5c), salt (to taste), ghee (4tbsp), garam masala powder (1/2tsp), chopped coriander leaves (for garnish), chutney and curd (to serve).
Method of preparation:-
Take colander, drain the soaked rice and dals in it and keep them aside. Take cloves, cinnamon and cardamom spices, crush them. Take large and heavy frying pan, place it over heat. Heat 3 tablespoon of ghee in it. Fry bay leaf, cumin seeds and crushed spices in it and then add garlic, ginger and chilies in it and fry them by stirring for a minute. Then fry onions and baby potatoes in it for about 2 minutes by stirring them. Add peas, carrots, salt and garam masala and turmeric powder in it. Now add rice and dals. Fry for one minute and then add water in it. Keep it to boil, then cover the pan and keep it to simmer until the rice gets cooked. When the rice gets cooked then mix ghee in it and sprinkle the coriander leaves on it. Now Bangla khichdi gets ready. Serve it hot with curd and chutney.

Bhapa Chingri Recipe
Ingredients
Prawn (10 to 12 pieces), sugar (to taste), coconut paste (1/2coconut), mustard oil (100gms), turmeric powder (2tsp), salt (to taste), chopped green chilies (10 to 12), paste of chili and white mustard (5tbsp).
Method of preparation:-
Take prawn pieces, wash them and then soak them in salted water for about 5 minutes. Take a bowl, mix coconut paste, salt and sugar and mustard paste and turmeric powder in it. Now take out the prawn pieces from the water and keep them to dry. Then put them in the coconut mixture to marinate. Take banana leaf place the prawn piece on it. Take chopped chili and spread it on prawn piece and place another banana leaf on it. Then place it in a pressure cooker and then cook it for about 10 minutes. Now the dish is ready to serve.

Bandhakopir Ghonto Recipe
Ingredients
Potatoes, boiled and cut into cubes (2medium), finely chopped cabbage (1), fresh green peas (1c), oil (as needed), turmeric powder (1tsp), grounded panch phoran (1tsp), cumin powder (1tsp), salt (to taste),coriander powder (1tsp), red chili powder ( 1 1/2tsp), ginger-garlic-green chili paste (1tbsp) and bay leaves (2).
Method of preparation:-
Take a pan, place it over heat. Heat oil in it and add potatoes in it and then fry them until they turn golden brown. Take out them from pan and keep them aside. Now fry the ginger-garlic-green chili paste and bay leaves in the pan until the raw smell disappears. Add chopped cabbage in it and then add water. Keep it to cook until the cabbage gets soft. Then mix peas, fried potatoes, panch phoran, coriander, turmeric powder, chili powder, cumin and salt in it. Mix all these ingredients properly and then and then cover the pan and keep it to cook by stirring for about 5 to 6 minutes. Now take off the pan from heat and serve the dish with rice.

Bhaingan Bhaja Recipe
Ingredients
Brinjals (4), mustard oil (1/2c), turmeric powder (2tsp), salt (to taste), dry red chilies (4), red chili powder (2tsp).
Method of preparation:-
Take brinjals, wash them and then cut them in round pieces. Take a bowl, put the brinjal pieces in it and add salt, turmeric powder and chili powder in it. Mix this mixture well and then keep it aside for about an hour. Take a pan, place it over medium heat. Heat oil in it and then add brinjal pieces in it. Fry them on medium flame until they get soft. Now take off the pan from heat and remove the brinjal pieces from the pan and place them on paper towel to absorb the extra oil. Now the dish is ready to serve. Serve it hot with rice.

Aloo Bhaja Recipe
Ingredients
Potatoes (4large), oil (4tbsp), finely chopped green chilies (3 optional), salt (to taste), black cumin seeds (1tsp), dry red chili (1), turmeric powder (1/2tsp).
Method of preparation:-
Take potatoes, peel them and cut them into thin strips in a bowl. Keep the bowl aside. Take a flat pan, place it over heat. Heat oil in it and fry red chili in it. When it starts breaking and turns to black in color then add cumin seeds in it. Fry the seeds until they get crackle. Now add the potato strips, green chilies and turmeric powder in it. Fry the potatoes for about 20 seconds on high heat and then reduce the heat and cook them until they get soft. Then add salt in it and mix it well. Now the dish is ready serve it hot with dal and rice.

Aloo Posto Recipe
Ingredients
Boiled and peeled potatoes (3large), finely chopped onions (1large), turmeric powder (1/2tsp), cooking oil (3tbsp), green chilies (4), salt (to taste), bay leaf (1), water (1c), ginger-garlic paste (1tbsp), red chili powder (1tsp), poppy seeds (1/2c), Methi seeds (1/2tsp), saunf (1/2tsp), mustard seeds (1/4tsp), kalongi (1/4tsp), jeera powder (1/2tsp).
Method of preparation:-
Take boiled potatoes, cut them into long slices in a bowl and keep it aside. Take some warm water and soak poppy seeds in it. Make the smooth paste of poppy seeds, green chilies with salt in a grinder. Take a pan, place it over heat. Heat oil in it and then add mustard seeds, kalongi, saunf, methi seeds and jeera powder in it. Fry them until they get splutter. Now sauté onions, ginger-garlic paste in it until it changes to golden brown. Then add potatoes, salt, red chill powder, coriander powder and turmeric powder in it. Keep it to fry for about 3 to 4 minutes and then add poppy seeds mixture in it and again fry it for about 3 to 4 minutes. Now add water in it and then reduce the heat to low. Cover the pan and keep the dish to cook until it gets dry. Now the dish is ready serve it with rice.
