Gokul Pithe Recipe

Ingredients
Khoya (450gms), flour (150gms), ghee (40gms), grated coconut (200gms), sugar/date palm jiggery (2 ½ c), sodium bicarbonate 91/8tsp), water (5 to 6c).

Method of preparation:-
gokul-pithe-recipeTake a heavy based vessel, place it over heat. Add 4 cups of water and 2 cups of sugar in it. Keep it to simmer to make sugar syrup. Take off the pan from heat and keep it to cool. Take a pan, place it over medium heat. Fry khoya, coconut and sugar in it by stirring it. Now take off the pan from heat and keep it to cool. Then make equal balls of this mixture. Press the balls of mixture with your palm to make cakes. Take a bowl, add flour, ghee, bi carbonate and little water to make batter. Heat ghee in a pan for deep frying, dip the coconut milk cakes in the batter and then fry them in hot oil until they turn golden brown in color. Take out them from the pan and place them on paper towel to drain the extra oil. Now soak the cakes in sugar syrup and then serve them.

Easy Maida (Flour) Cake Recipe

Ingredients
Maida (200gms), eggs (4large), baking powder (1tsp), butter (200gms), sugar (200gms), soda (1/2tsp), vanilla (1tsp), a microwave oven.

Method of preparation:-
easy-maida-flour-cakeTake a bowl, beat butter abd sugar in it. An electric beater is used. Sift the maida, baking powder and soda thrice in a bowl. Take a bowl, beat eggs one at a time and the add the beaten eggs in butter and sugar mixture. Add maida in the cut and fold method. Beat the mixture until it gets light and fluffy. Pour it in baking pan and then place it in the microwave on high for 5 to 6 minutes. When the cake starts leaving the pan then put it in the oven and bake it for 45 minutes at 150 degreesC. Then take it out from oven and keep it to cool and then serve it.

Christmas Plum Cake Recipe

Ingredients
Maida (200gms), margarine (200gms), cashew (100gms), raisins (50gms), orange peel (50gms), cake masala (2tsp), baking soda (2tsp), eggs (6), powdered nutmeg (a pinch), caramel syrup (1c), shareeja (2tsp), giger soakes in sugar syrup (50gms), cherries (50gms), almonds (100gms), butter (200gms), caster sugar (200gms).

Method of preparation:-
plum_cakeTake a bowl, beat eggs in it. Take another bowl, beat butter and sugar in it. Mix the finely chopped dry fruits, sieved maida and sieved cooking soda and baking soda in a bowl well. Mix the shareeja and cake masala to the butter mixture. Add beaten eggs and caramel syrup , beat it well to form a foamy mixture. Add this mixture to the maida mixture and mix them to get a soft cake mixture. Pour this mixture to the greased baking pan and bake it for about 20 minutes at 160 degrees C. Then take it out and keep it to cool and then serve it.

Chocolate Pound Cake Recipe

Ingredients
Cake Flour (2 1/4c), Vanilla (2tsp),Prune puree (1/4c), salt (1/4tsp), Margarine (1/4c), Low –fat yogurt (8ounces), powdered sugar (1tsp), egg whites (3), sugar (3/4c), process cocoa (1/4c).

Method of preparation:-
chocolate-poundTake loaf pan, grease it with cooking spray and then sprinkle one teaspoon of flour and then keep it aside. Take a bowl, blend prune puree with margarine. Add sugar and beat it properly. Now add egg white in the above and beat again for 5 minutes until it gets blended. Add vanilla in it. Take a bowl, add flour, cocoa powder, salt and soda in it. Add it to prune puree and blend it with yogurt. Now pour this mixture to the greased loaf pan. Bake it in preheated oven at 350 degrees for 55 to 60 minutes. Keep it to cool and the chocolate pound is ready.

Cashew Badam Cake Recipe

Ingredients
Coconut grated (1c), ghee (200gms), badam (50gms), cashew nuts (100gms).

Method of preparation:-
cashew-badam-cake-recipeTake a bowl, soak cashew nuts and badam in water in the bowl. Then remove the skin of badam. Make a smooth paste of coconut, soaked badam and cashew. Make sugar syrup by adding water in a pan. Keep it on heat and boil it until the syrup gets 1 string consistency. Add the ground paste to the syrup and then add ghee. When the mixture leaves the sides of the pan then pour this mixture over a greased plate. Then cut it into slices and serve it. This cake is used on janamshtami or deepavali.

Lemon Cupcake Recipe

Ingredients
Self raising flour (1/3c), softened butter (90gms) softened cream cheese (90gms), superfine sugar (2/3c), finely grated lemon lemon rind (2tsp), all purpose flour (1/2c) and eggs (2).

Method of preparation:-

Take a bowl, beat butter, lemon rind, cheese, sugar and eggs in it until it gets smooth and creamy. Sift the two flours in a bowl and mix in the cream mixture. Now beat it properly. Divide the batter in cupcakes and place them in preheated oven and then bake them for about 20 minutes. Keep them to cool for few minutes and then finally place to wire rack.

Pineapple Cake Recipe

Ingredients
Flour (45gms), eggs (2), baking powder (1/2tsp), pineapple essence (1/2tsp), boiling water (1 1/2tsp) and sugar (55gms).

Method of preparation:-
pineapple-cakeTake a bowl, sieve the flour and baking flour thrice in it. Separate the egg and egg yolk in bowls. Beat the egg white for about 2 minutes until it gets stiff and then add powdered sugar 1 spoon at a time and then beat it properly. Now add egg yolk and essence. Slowly add the boiling water and beat it in one direction. Fold it in the flour with a spoon, adding half of it at a time by dusting it over the egg mixture. Now pour this batter into the greased and floured pan and bake it for 20 to 25 minutes. Then take it out and keep it to cool.
Icing:
Tinned pineapple (finely cut) and also for decoration cherries, pineapple syrup, pineapple essence
Method
Take cake and divide it horizontally into 2 parts. Sprinkle pineapple syrup over the cake. Beat the cream until it gets light and fluffy and then add essence. Spread cream and then sprinkle pineapple pieces. Repeat the process and cover it with cream and then decorate with cherries and pineapples. Keep it to chill and then serve it.

Puffed Coconut Pastry Recipe

Ingredients
Grated coconut (1c), condensed milk (1/2c), butter (1/2c), cardamom (3), jiggery (1/2c).

Method of preparation:-
coconut-puff-pastryTake a pan, melt the jiggery in 1 cup of water and keep it to boil, when the solution gets thicken then add the grated coconut slowly in the pan. Add condensed milk and cardamom until it becomes thick. Now keep it aside to cool. When it gets thicken then make the small balls with it. Roll out 1 pastry sheet and brush it with butter. Make about 5 to 6 pastry sheets. Place the small balls of filling on one side and roll it with pastry sheet to form a roll. Bake it in the oven for about 30 to 35 minutes at 350 degrees F or until the pastry gets golden brown.

Fruit Cake Recipe

Ingredients
Refined flour (1/2kg), baking powder (4tsp), vanilla essence (4tsp), butter (1/2kg), egg (1kg), cherries (175gms), chopped dates (250gms), chopped cashew nuts (175gms), grapes with seeds (200gms), powdered sugar (1kg), brandy (optional).

Method of preparation:-
fruit-cakeTake grapes, dates and cherries, slice them into very small pieces. Soak and keep the slices in brandy one week before preparaing the cake. Take a pan, place it over heat and then put 1/2kg of sugar in it. Add a little water and keep it stirring on low heat to avoid burning. Take off the pan from the heat when the sugar turns brown. Take the remaining powdered sugar in a bowl and mix butter in it. Kep it aside. Take a large bowl, sieve flour and baking powder together in it. Add the soaked fruits in brandy and the chopped cashew nuts in it. Mix them well. Now beat egg white and egg yolk in a bowl and then mix it to the sugar-butter mixture and then mix it well. Now add the vanilla essence in it. Take a greased and floured vessel, pour this mixture and then the fruit mixture evenly. Repeat it alternately. Place the vessel in preheated oven and bake it for 40 minutes at 3500C and then take it out. Keep it to cool and then take out the cake on a plate. Now the fruit cake is ready to serve.

Pista Cake Recipe

Ingredients
Pista (1c), ghee (1 ¼ to 1 1/2c), milk just enough to grind the pista, sugar (2c), pista essence (2 or 3 drops).

Method of preparation:-
pista-cakeTake a bowl, soak pistas for about 4 hours in cold water. Peel the skin and then grind pista into a paste by adding milk instead of water. The paste must be like sauce of tomatoes. Take a thick bottomed vessel, put the paste and sugar in the vessel and then keep it to cook. Keep it stirring constantly so that it does not stick to the vessel. When the sugar gets dissolved then start adding ghee little by little. The cake will start thickening. When the cake leaves the bottom of the vessel then adds the essence and mixes it. Pour it to the greased tray and keep it to cool for some time. Then cut the cake into desired shape. Now pista cake is ready to eat hot.
