Cherry Muffins Recipe

Ingredients
1. Flour (1 1/2c)
2. eggs (2)
3. milk (1/2c)
4. butter (50gms)
5. caster sugar (3/4c)
6. baking powder (2tsp)
7. chopped cherries (1/2c)

Method of preparation:-
1. First heat the oven to 200 degrees c. Take a bowl, cream the butter with sugar in it. Add the beaten eggs and milk to it.

2. Take another bowl, sieve the flour with the baking powder in it. Add the sieved flour to the egg mixture and then add the chopped cherries and the egg mixture.

3. Now pour this mixture in the prepared muffin tins. Place the tins in preheated oven and bake them for 15 to 20 minutes. When the muffins get baked then take out them from the oven and keep them to cool and then serve them.

Rainbow Cake Recipe

Ingredients
1. Strawberry jelly (1pkt)
2. lime jelly (1pkt)
3. lemon jelly (1pkt)
4. raspberry jelly (1pkt)
5. orange jelly (1pkt)
6. boiling water (5c)
7. cold water (2 1/2c)
8. whipped cream (1c)

Method of preparation:-
1. Take each packet of jelly gelatin, dissolve it separately in one cup of boiling water. Then add ½ cup of cold water in each of them. Keep the rasbery gelatin to chill until it gets very thick.

2. Take a 9” spring form pan, smoothly line the sides of it with wax paper. Cut to extract 3 inches above the pan. Whip the raspberry gelatin until it gets fluffy. Now pour this mixture into the pan.

3. Keep the pan in the refrigerator to chill it or until it set but not firm. Chill, whip and layer the remaining flavors in the pan, keep each layer chill until sat but not firm before adding the next layer.

4. Keep this pan to chill overnight and loosen around the edges and then remove the sides of the pan and paper. Now take the whipped cream and spread it over the top and sides of the cake. Now the rainbow cake is ready.

Yellow Cake Recipe

Ingredients
1. All purpose flour (3 3/4c)
2. butter (1c)
3. eggs (3)
4. baking powder (2 1/4tsp)
5. white sugar (2 1/2c)
6. buttermilk (2 1/2c)
7. baking soda (2 1/2tsp)
8. vanilla extract (1 1/2tsp)

Method of preparation:-
1. First heat the oven to 350 degrees f. Take two baking pans, grease and flour them.

2. Take a bowl, mix the flour, baking soda, baking powder in it and then keep it aside. Take a large bowl, cream together the butter and sugar until it gets light anf fluffy. Beat eggs in it one at a time and then add vanilla. Beat the flour mixture alternately with buttermilk.

3. Now pour the batter into the prepared baking pans. Place the pans in preheated oven and bake for about 35 to 40 minutes. Insert the tooth pick in the center of the cake if it comes out clean then the cake is baked.

4. Take out the pans from oven and keep to cool. Now the yellow cake is ready to serve.

Apple Walnut Cake Recipe

Ingredients

For sponge cake:
1. 1eggless chocolate sponge cake

For Filling:
1. Ground cinnamon (1/2tsp)
2. water or rum (2tbsp)
3. peeled, cored and sliced apples (4 to 5 dessert apples)
4. sugar (4tbsp)

For soaking syrup:
1. Water (1c)
2. sugar (2tbsp)

For topping:
1. Whipping cream (1 1/2c)
2. walnuts praline (8tbsp)

Method of preparation:-
1. For Filling:- Take a saucepan, Cook the apples with cinnamon, sugar and 2 tablespoon of water in the pan to make the puree. When the puree gets ready then take off the pan from heat and keep it to cool and then add the rum.

2. Take sponge cake, slice the cake horizontally into two layers. Soak the cake layers with the soaking syrup. Sandwich both the layers of cake with the apple puree.

3. Spread the whipped cream evenly on the top and sides and then spread the crushed walnuts praline over it.

Number of servings – 4 to 6
Preparation time – 30 minutes + baking time 30 minutes

Eggless Sponge Cake Recipe

Ingredients
1. Condensed milk (1/2c)
2. baking powder (1level tsp)
3. vanilla essence (1tsp)
4. melted butter or margarine (60ml)
5. soda bi-carb (1/2tsp)
6. self raising flour (140gms)
7. water (75ml)

Method of preparation:-
1. Take a bowl, sieve the flour, baking powder and soda bi-carb together in it. Add condensed milk, melted butter, essence and 75ml water in the flour mixture and then beat them well.

2. Take a 6” diameter tin and grease it. Pour the mixture into the greased tin. Place the baking tin in the preheated oven and bake it for about 10 minutes at 200degrees C.

3. Then reduce the temperature of the oven to 150 degrees C and bake it for further 10 minutes. The cake is baked when it leaves the sides of the tin. Now take it out from the oven and keep it for 1 minute. Invert the tin over the rack and tap it sharply to remove. Keep it to cool.

Preparation time – 30 minutes

Mango Truffle Cake Recipe

Ingredients
1. Peeled and finely chopped mango (1)

For chocolate cake:-
1. Plain flour or maida (1c)
2. melted butter (1/2c)
3. vanilla essence (1tsp)
4. condensed milk (1/2can)
5. soda bicarbonate (1/2tsp)
6. baking powder (1tsp)
7. cocoa powder (2tbsp)

For truffle icing:-
1. Cream (1c or 200gms)
2. chopped dark chocolate (2c or 250gms)

For soaking Syrup:-
1. Rum (1tbsp optional)
2. sugar (2tbsp)
3. water (1/2c)

For garnish:-
1. Peled and sliced mango (1)
2. mint leaves (a few)
3. chocolate cream wafer biscuits rolls (optional)
4. whipped fresh cream (1/4c)
5. red cherries (8-10)

Method of preparation:-
1. For chocolate cake:- Sift the flour, baking powder, cocoa powder and soda bicarbonate. Take a bowl, mix all these ingredients together with ½ cup of water, sugar and rum and mix it well using a whisk.

2. Take a 6” diameter baking tin, pour the mixture in it. Place the baking tin in the preheated oven. Bake it for about 20 minutes at 180 ½ C. Take out the tin from the oven, unmould it and then cool it on a wire rack.

3. For Truffle Icing:- Take a saucepan, put cream in it and then keep it to boil. Take off the pan from heat. Add the chopped chocolate and mix it well with a whisk until it becomes a smooth sauce. Cool it completely and then keep it aside.

4. Take chocolate cake, cut it horizontally into two equal parts. Place top half of cake on a serving plate and soak with half the soaking syrup. Spread a layer of truffle icing and the chopped mango.

5. Sandwich it with other half of the cake and soak this half with the with the remaining soaking syrup. Now spread the another layer of the truffle icing syrup.

6. Cover the sides of the cake with the chocolate cream wafer biscuits rolls. Decorate it with whipped cream, mango slices, mint leaves and cherries. Keep it to chill at least 2 hours before serving.

Makes – 1 cake
Preparation time – 45 minutes

Lemon Cheesecake Recipe

Ingredients

For Crust:
1. Melted butter (2tsp)
2. crushed biscuits (10 biscuits)

For cheese cake Mixture:-
1. 1 recipe cream cheese
2. sugar (4tbsp)
3. lemon zest (1tsp)
4. lemon juice (1tsp)
5. yogurt or curd (1/2c)
6. lemon essence (a few drops)
7. sugarfree orange marmalade, for the topping (2tbsp optional)

Method of preparation:-
1. For Crust:- Take a bowl, mix butter and biscuits in it. Keep the bowl in the refrigerator until it gets set. Then line the bottom of 4” diameter loose bottomed cake tin.

2. For Cheese Cake Mixture:- Take a blender, blend cream cheese in it until it gets smooth and free from lumps. Add some warm milk or whey if required. Mix with the remaining ingredients in a bowl and whisk it until the mixture becomes smooth.

3. For Topping:- Take a pan, mix marmalade with 1 tablespoon of water and melt it over gentle heat and then cool it slightly. Now pour the cheesecake mixture over the set crust and keep it in the refrigerator till the mixture gets sets.

4. Pour the warm topping mixture and keep it to chill again for 10 to 15 minutes. Cut it into wedges and then serve it cold.

Cherry Almond Cake Recipe

Ingredients
1. Glace cherries (275gms)
2. baking powder (1tsp)
3. castor sugar (225gms)
4. ground almonds without skin (175gms)
5. almond flavoring (1/2tsp)
6. self raising flour (65gms)
7. soft butter (225gms)
8. beaten eggs (6)
9. salt (a pinch)
10. sift icing sugar (for decoration)

Method of preparation:-
1. First heat the oven to 350 degrees F. Take a 9” round cake pan. Line it with geese proof paper and grease it. The cake will crack if the pan used for cake is smaller than the specified one.

2. Take cherries, cut them into half and pat dry them. Dust lightly with flour and arrange in the bottom of the pan.

3. Take a bowl, beat butter with sugar in it until gets fluffy. Add eggs and beat a little at a time. Add 1 tablespoon of flour. Stir it but do not overstir, it results hole in the cake. Now add flour, a pinch of salt, baking powder, flavoring and almonds. Mix them and then pour into the pan. Tap the pan at the bottom.

4. Place the pan in the preheated oven and bake it for about 1 hour or until it gets baked. Insert the tooth pick in the center of cake if it comes out clean then the cake is ready. Keep it to cool for few minutes. Decorate its top with sift icing sugar. Do not over bake the cake it results in dry texture.

Black Bottom Cap Cake Recipe

Ingredients

Black:-
1. All purpose flour (1 1/2c)
2. baking soda (1tsp)
3. water (1c)
4. sugar (1c)
5. vegetable oil (1/3c)
6. white vinegar (1tbsp)
7. unsweetened cocoa powder (1/4c)
8. salt (as per taste)

White:-
1. Semi-sweet chocolate chips (6oz)
2. sugar (1/3c)
3. egg (1)
4. cream cheese (8oz)

Method of preparation:-
1. Take a bowl, mix together flour, sugar, salt, baking soda and cocoa in it. Pour water, vinegar and oil in it and then mix it in a blender.

2. Take another bowl, beat cream cheese in it until it gets smooth. Beat eggs with sugar and then add chocolate chips in it.

3. Take muffin pans with paper baking cups. Scoop the chocolate batter evenly into these muffin pans. Take 1 tablespoon of cream cheese mixture and then put it on the center of batter in each pan.

4. Place the pans in oven and bake it for about 25 to 30 minutes at 350 degrees until the tooth pick inserted in the center comes out clean. Keep the cup cakes to cool and then remove to the rack to cool them completely.

Almond Strawberry Cake Recipe

Ingredients

For Pastry:-
1. Plain flour or maida (200gms)
2. ground almonds (30gms)
3. butter (100gms)
4. icing sugar (100gms)
5. ice cold water (2-3tbsp)
6. salt (a pinch)

For Strawberry Sauce:-
1. Strawberries (2c)
2. lemon juice (1/2lemon)
3. icing sugar (2tbsp)

For Filling:
1. Whipped cream (1 1/2c)
2. sliced Strawberries (1 1/2c)
3. For garnish:- A few strawberries and icing sugar to sprinkle

Method of preparation:-
1. Take a bowl, sieve the flour and salt together in it. Mix ground almonds in it and then add butter, rub it into the flour with your fingertips. Add sugar and mix it and then add the ice cold water to make dough of this mixture. Keep it to chill for about 30 minutes.

2. Heat the oven to 200 degrees C. Lightly sprinkle the flour on the flat surface and then roll out the pastry on this surface. Cut it into 16 rounds of 3mm thickness.

3. Now bake the pastries for about 15 to 20 minutes until get pale golden in color. Cool the cakes and then keep them aside.

4. For Strawberry sauce:- Take strawberries and then make the purees of the strawberries in a blender. Add lemon juice and the icing sugar in it. Strain the puree and then keep it in the refrigerator.

5. Take a plate, place one cake on a plate. Pipe some whipped cream on the top and place some strawberries. Sandwich it with another cake. Make 7 cakes in the same way.

6. Now garnish each cake by dusting icing sugar on the top and then arrange strawberries. Then serve it surrounded by sauce.

Make about – 8 shortcakes
Preparation time – 45 minutes + baking time 20 minutes
