Cheese Lemon Pie Recipe
Ingredients
1. Corn flakes (2c)
2. golden syrup (2tbsp)
3. lemons (2large and 3 small)
4. cheese powder (2heaped tbsp)
5. condensed milk (1tin)
6. digestive or Marie gold biscuits (8)
7. melted butter (40 gms)
Method of preparation:-
1. Take corn flakes and biscuits; crush them until the mixture resembles coarse breadcrumbs. Keep one tablespoon for garnish. Mix the melted butter and golden syrup in it.
2. Take a baking dish of 15 cm with sides of 3cm, grease it. Spread the mixture in greased baking dish. Place the dish in hot oven and bake it at 200° degree c, gas 6 about 15 minutes until turn light brown in color.
3. Now take it out from the oven and press the crust with the back of the spoon. Keep it to cool, set it and gently remove the pie shell from the dish. Mix the condensed milk, rind and juice of lemon and cheese powder until get smooth.
4. Fill the pie shell with the condensed milk mixture; garnish it with cornflakes and biscuit mixture. Serve it cold.

Cheese Soup Recipe
Ingredients
1. Vegetable stock (6c)
2. chopped onions (2med.)
3. butter (2tbsp)
4. black pepper (1tsp)
5. chopped parsley leaves (a few)
6. chopped carrot (1)
7. maida (4tsp)
8. grated cheese (1c)
9. salt (1tsp)
Method of preparation:-
1. Take a pan, heat butter in it and then add chopped carrots and onions. Saute them in oil until gets soft. Add maida while stirring and slowly add the vegetable stock. Keep it to boil and add the black pepper and salt.
2. Reduce the heat to low and then simmer it for about 30 minutes. Now sieve the soup or liquidize it in the blender. Keep it to boil, take off the pan from heat.
3. Add some of the cheese; mix it until it gets melt. Add the chopped parsley. Reheat the soup before serving and then garnish it with the remaining cheese.

Caramelized Onion and Parmesan Cheese Soup Recipe
Ingredients
1. Sliced onion (2c)
2. vegetable stock (2quarts)
3. diced day old bread (2c)
4. heavy cream (1/2c)
5. fresh black pepper (6turns)
6. salt (2 1/2tsp)
7. bay leaves (2)
8. olive oil (2tbsp)
9. grated parmigiano-reggiano cheese (1/2c)
10. peeled garlic cloves (2/3rd c)
11. fresh chopped basil (1tbsp)
12. fresh chopped coriander leaves (1tbsp)
13. finely chopped parsley (1tbsp)
14. fresh chopped thyme (1tsp)
Method of preparation:-
1. Take a soup pot, heat olive oil in it. When the oil gets hot add bay leaves, garlic and onions. Add salt and pepper. Saute the onion mixture for about 7 minutes or until the onions are caramelized.
2. Add the stock, chopped basil and thyme. Keep the mixture to boil. Reduce the heat to low and keep it to simmer for 40 minutes. Now turn the heat up and then mix the bread and cream in it. Keep on mixing for about 10 minutes until the bread has dissolved.
3. Make the smooth puree of the soup with hand blender. Add the Parmigiano- Reggiano cheese, coriander and parsley. Now season the soup with salt and pepper.

Crispy Chicken and Cheese Recipe
Ingredients
1. Boneless chicken breast, chunks (2 ½ inch pieces)
2. chopped garlic (4-5)
3. bread crumbs (1c)
4. beaten egg (1)
5. cheese cubes (200gms)
6. crushed peppercorns (4-5)
7. chopped fresh coriander leaves (1tbsp)
8. lemon juice (2tsp)
9. tomato ketchup (1tbsp)
10. salt (to taste)
11. sprig of parsley (for garnishing)
For sauce:-
1. Mayonnaise (6tbsp)
2. tomato ketchup (3tbsp)
Method of preparation:-
1. Take a bowl, put the chicken cubes in it. Add crushed peppercorns, garlic, salt, beaten egg, coriander leaves, lemon juice and tomato ketchup in the bowl. Keep them for marinate for an hour.
2. Take a plate, place the bread crumbs in it. Take toothpick and string the chicken cubes on each toothpick and place a cheese cube between the chicken cubes. Roll them in the bread crumbs to coat them all around.
3. Dip them in the marinade and again roll them in the breadcrumbs for double coating. Press them to stick the bread crumbs firmly on them.
4. Take a kadai, heat oil in it. Slide the chicken and cheese fingers in the hot oil for deep frying. Drain and place them on the paper towel.
5. Take a bowl, mix the mayonnaise and tomato ketchup in the bowl to make a sauce. Place the fried chicken and cheese finger on the serving dish, garnish it with the sprig of parsley and serve it hot with the prepared sauce.

Tomato and Cheese Omelets Recipe
Ingredients
1. Eggs (2large)
2. oil (1tbsp)
3. finely chopped onion (1small)
4. pepper jack cheese, cut into 4 strips (1slice)
5. halved cherry tomatoes (12)
6. finely chopped green chili (1)
7. coriander leaves (3tbsp)
8. salt and pepper (to taste)
Method of preparation:-
1. Take 2 large eggs. Break them and put them in a bowl. Now beat the eggs with a spoon or a beater.
2. Take another bowl; add chopped onions, cherry tomatoes, chopped green chili, coriander leaves, salt and pepper to taste in the bowl. Add the beaten eggs in the bowl; mix the eggs with all other ingredients.
3. Take a non stick frying pan, heat the oil in it. Add the egg mixture with the cheese strips in the pan. Now place the cherry strips evenly over the pan. Cover the pan and cook it until the omelets get cooked. When the omelets get cooked then serve it hot in a serving dish.

Moong Soup With Paneer Recipe
Ingredients
1. Moong (3/4c)
2. mustard seeds (1tbsp)
3. finely chopped paneer (2tbsp)
4. cumin seeds (1tsp)
5. sugar (2pinches)
6. asafoetida (1/2tsp)
7. ghee (2tbsp)
8. lemon juice (1tsp)
9. pepper powder (1/2tsp)
10. salt (to taste)
Method of preparation:-
1. Soak the moong dal in water for few hours. Cook it in the pressure cooker with 6 cupps of water. Take a blender and then blend the cooked moong in it and strain it.
2. Take a pan, heat the ghee in it and fry the mustard seeds and the cumin seeds in it. When they starts crackle then add the asafoetida and cooked moong liquid in the pan.
3. Add the pepper, sugar, salt and the lemon juice in the pan. Keep it to boil for about 2 minutes. Now add the chopped paneer and again cook for about 2 minutes. When the soup of moong gets ready then serve it hot in the soup bowl.
Number of servings – 6 cups

Cheesy Sweet Jamuns Recipe
Ingredients
1. Puffed rice, washed and soaked in water for 2 hours (150gms)
2. oil for frying
3. baking powder (1/4tsp)
4. mava (60gms)
For stuffing:-
1. Grated amul cheese (90gms)
2. sugar (100gms)
3. grated coconut (2tsp)
4. mava (90gms)
5. chopped cashew nuts (1tbsp)
6. chopped chironji (1tsp)
7. chopped raisins (1tbsp)
For syrup:-
1. Sugar (200gms)
2. rose essence (2tsp)
3. water (3c)
4. cardamom powder (1/2tsp)
5. milk (1tbsp)
6. silver foil for the decoration
Method of preparation:-
1. First make the syrup boiling water with the sugar. Add milk in it to remove the scum from its surface. When the syrup gets ready then take off the pan from the heat and flavor it with essence and cardamom powder. Keep it aside.
2. Take a frying pan, place it over heat. Cook the mava in it for stuffing in it until it turns golden brown. Add the other ingredients and mix them well and then make the small balls of this mixture. Keep them aside.
3. Drain out the puffed rice from the water and mix with the ingredients for jamuns except oil. Knead the mixture properly and then make the balls of this mixture. Flatten out the puffed rice balls and place the mava ball on it. Fold over and close the sides.
4. Put them in hot oil for deep frying until turn’s dark brown. Drain them and dip them in warm syrup for an hour. Decorate them with silver foil and serve them warm.
Make about – 24 jamuns

Home Made Paneer Recipe
Ingredients
1. Whole milk (5c)
2. vinegar (2tbsp)
Method of preparation:-
1. Take 5 cups of whole milk; boil it in an open pan. When the milk gets boiled then add 2 teaspoon of vinegar and wait for sometimes until the milk gets curdle completely.
2. When the milk gets curdled then takes off the pan from the heat and keep it sit for about 10 minutes. Take a cotton muslin cloth and then pour the curdled milk onto the muslin cloth ant tie it with a tight knot.
3. When all the water from the paneer is drained then open the knot of the cloth and shape it into a rectangular block. Now place it in another piece of clean muslin cloth, wrap it properly and then keep it in the refrigerator for overnight.
4. Next day cut the paneer into cubes and deep fry it in hot oil. Then drain it and store it in the fridge.

Palak Paneer Recipe
Ingredients
1. Spinach (500gms)
2. Paneer (150-200gms)
3. onions (5med.)
4. cooking oil (6-7tbsp)
5. garlic (2-3flakes)
6. cumin seeds (1tbsp)
7. salt (to taste)
8. gram masala (to taste)
9. chili powder (to taste)
10. jeera powder (1tsp)
Method of preparation:-
1. Take spinach leaves, wash it and then boil it in a pan in water. Now drain the water and then make the puree of the spinach leaves. Cut 4 of the onions finely.
2. Take a pan, place it over heat. Add oil in it and then saute the cut onions in the pan until gets tender. Make a fine paste of garlic flakes and a onion. Now add this paste to the sauteed onions.
3. Also add the puree of spinach leaves with spice powder. Add some water if it is necessary. Boil it for a minute or two. Now take 150 or 200gms of paneer. Cut it into cube shaped of desired size and then fry them in oil until gets golden brown.
4. Now add this fried paneer into the prepared palak and cook it for about 3-5 minutes. When it gets ready then serve it hot in a serving bowl with rotis or rice.

Shahi Paneer Recipe
Ingredients
1. Paneer or cottage cheese (250gm)
2. fine chopped tomatoes (4)
3. fine chopped ginger piece (1/2”)
4. crushed cardamoms (2)
5. ghee or butter (3tbsp)
6. chopped onion into strips (1)
7. fine chopped green chillies (2)
8. red chilli powder (1/2tsp)
9. milk (1/2c)
10. beaten curd (1/4c)
11. garam masala (1/2tsp)
12. tomato sauce (2tbsp)
13. salt (to taste)
To ganish:-
1. chopped coriander (1tbsp)
2. grated paneer (2tbsp)
Method of preparation:-
1. Take 250 grams of paneer and chopped it into 2 inches finger shaped. Take a pan, place it over heat and heat the half of ghee in it. Then add onion, ginger, cardamom and green chilli in the pan.Fry these for about 3-4 minutes.
2. Add tomatoes, cover the pan and then cook tomatoes for about 7-8 minutes. Add ½ c of water and keep it to cool.Then put this mixture in the mixie and then blend it to make smooth gravy.
3. Now heat the remaining ghee in the sauce pan, add gravy in it with the other ingredients except paneer and milk. Boil it to make thick gravy.
4. Heat the gravy before serving and then add milk and paneer fingers.Boil it for about 3-4 minutes.Then put it in serving bowl and garnish it with grated paneer and chopped coriander.
Number of servings – 6
Making time – 45 minutes.
