Tomato Chicken Recipe
Ingredients
1. Chicken cut into pieces (2lb)
2. pureed tomatoes (3)
3. cloves (2-3)
4. coconut (2tbsp)
5. coconut (2tbsp)
6. cumin powder (1tsp)
7. coriander powder (2-3tsp)
8. red chili powder (1 1/2tsp)
9. curd (2-3tbsp)
10. finely sliced onions (5)
11. cardamom (2-3)
12. cinnamon (1”)
13. cashew nuts, ground with a little water to a paste
14. chopped coriander leaves (a bunch)
15. cooking oil
Method of preparation:-
1. Take a pan, heat oil in it. Deep fry the sliced onions in oil until they get properly brown. Drain them, add the curd and blend the mixture with the cinnamon, cardamom, cloves until gets smooth. Keep it aside.
2. Take a pan, heat some oil in it and then fry the masala until the oil starts to separate. Now add the dry powders and fry them for 45 seconds and then add the pureed tomato and the chicken pieces.
3. Add some water and keep it to simmer until the chicken is cooked. Add the cashew nut paste and keep it to boil. Garnish the chicken with chopped coriander. Serve it hot with rice or roti.

Meat Kofta Curry Recipe
Kofta Ingredients
1. Chopped meat (1kg)
2. chopped onion (1)
3. chana flour (3tbsp)
4. ginger (2” piece)
5. green chillies (2-3)
6. crushed black cardamom seeds (1tbsp)
7. red chilli powder (1tsp)
8. egg (1)
9. oil (for frying)
10. salt (to taste)
For gravy:-
1. Chopped onion (3)
2. coriander powder (2tsp)
3. oil or ghee (2tsp)
4. garam masala (1/2tsp)
5. red chilli powder (2tsp)
6. turmeric (1tsp)
7. tomato puree (3)
8. garlic (8flakes)
9. ginger (2pieces)
Method of preparation:-
1. Take a blender, put all the kofta ingredients in it except egg and then blend them to make a smooth paste. Add egg to this paste and mix them well.
2. Make the kofta like balls of this mixture and then deep fry them until get golden brown. Now drain them and keep them aside. Blend onions, garlic, ginger to make smooth paste and keep them aside.
3. Take a heavy bottomed pan, add the above paste and fry it until it turns brown. Now add tomato puree, turmeric, coriander powder, red chillies and salt and then fry them until the oil gets separated.
4. Add 3 glasses of water when the gravy starts boiling then reduce the heat to medium. Add koftas one by one into the gravy and keep it to simmer with half covered lid for about 20 minutes.
5. Now the koftas curry gets ready garnish it with coriander leaves and serve it hot with rice or chapatti.

Stuffed Chicken Recipe
Ingredients
1. Skinned and boneless chicken breast (4)
2. olive oil (3tbsp)
3. minced garlic (1tbsp)
4. salt (to taste)
5. lemon juice (1/2lemon)
6. finely chopped spring onion (3tbsp)
7. chopped basil leaves (2tbsp)
8. coarsely chopped button mushrooms (8fresh)
9. coarsely chopped morel mushrooms (8fresh)
10. black pepper (to taste)
11. mint leaves (for garnish)
Method of preparation:-
1. Take both kinds of mushrooms; mix them together along with chopped fresh basil leaves. Divide the mushroom mixture into 4 equal parts.
2. Slit each chicken breast with a knife lengthwise to make a pocket. Now fill the mushroom mixture in each pocket and seal it with tooth pick.
3. Take a bowl, mix spring onion, garlic, salt, black pepper, lemon juice and olive oil in it. Take a dish, place the chicken pieces in it and then pour the mixture of bowl over the chicken. Turn the chicken to coat it well. Keep it to marinate for 1-2 hours.
4. Barbecue the chicken about 4-6 minutes on each side until they are cooked. Garnish it with mint leaves and serve it with chunks of parsley and ginger butter.

Spicy Chicken Recipe
Ingredients
1. Chicken (1-1.5lb)
2. tomatoes (1big)
3. onions (2big)
4. ginger garlic paste (2-3tsp)
5. green chilies (2-3)
6. chili powder (2tsp)
7. turmeric powder (1/2tsp)
8. coriander powder (1/2tsp)
9. black pepper powder (1/2tsp)
10. garam masala (1tsp)
11. cumin seeds powder (1/2tsp)
12. oil
13. salt (to taste)
14. coriander and curry leaves
Method of preparation:-
1. Take chicken, clean it and then cut it into pieces. Pressure the chicken pieces by adding a little water, turmeric powder and salt.
2. Take a pan, heat oil in it and onions and garam masala. Sauté the onions and then add ginger-garlic paste and sauté it. Add tomatoes, coriander powder, cumin seeds powder, coriander powder, green chilies, black pepper powder and salt.
3. Fry this mixture for a while by adding a little bit of water. Add coriander and curry leaves and then mix them well. When the oil comes out on the top then add cooked chicken pieces. Mix up to coat all the pieces with masala.
4. Fry the chicken pieces until all the water drains out. Do not stir the pieces as it will break the pieces. Now the spicy chicken fry is ready to serve. Serve it as a side dish for rice or biryanis.

Kadai Chicken Recipe
Ingredients
1. Chicken cut into small pieces (1whole)
2. oil (4tbsp)
3. ginger paste (1tbsp)
4. garlic paste (1tbsp)
5. peeled and skinned tomatoes (1 1/2c)
6. chopped fresh coriander leaves (2tbsp)
7. garam masala powder (4tsp)
8. bay leaves (2)
9. whole red chilies (4)
10. coriander seeds (2tsp)
11. red chili powder (1tsp)
12. salt (optional)
13. chopped onions (2)
Method of preparation:-
1. Grind whole red chilies and coriander seeds into a coarse powder. Take a heavy kadai, heat oil in it. Add bay leaves, fry them for about 30 seconds. Add onions and saute them until they turn light brown.
2. Add ginger garlic paste, saute it for 2 minutes on medium heat. Now add the coarse powder of red chilies and coriander seeds and mix it well. Add tomatoes and cook them until they get fully cooked.
3. Now add chicken pieces, red chili powder and salt according to taste. Mix it well. Cover the kadai and cook the chicken until it gets tender. Then sprinkle the garam masala powder over the chicken. Garnish the chicken with onion rings and coriander leaves. Serve the chicken hot with chapattis and parathas.

Crunchy Chicken Recipe
Ingredients
1. Chicken breast fillets (4)
2. garlic clove (1)
3. onion (1)
4. coca cola (400ml)
5. lime juice or lemon juice (4tbsp)
6. chopped peanuts (50gms)
7. fresh parsley (2tbsp)
8. peanut butter (3tbsp)
9. vegetable fat for frying (2-3tbsp)
10. butter (2tbsp)
11. salt and pepper (to taste)
Method preparation:-
1. Take chicken fillets, rinse them under cold water and pat dry it with paper towel. Take a frying pan, heat butter in it and sear the chicken breast from both sides over high heat. Reduce the heat to low and cook it further for 10 to 15 minutes and then season it. Chop the onions and garlic and keep the aside.
2. Take another frying pan, heat oil in it fry onions and garlic in it over high heat. Add peanut butter, mix it until it gets smooth and then add the little of the coca cola. Gradually add the rest of the cola and then add the lime juice.
3. Chop the peanut and parsley and then add it to sauce. Place the chicken breasts on the plate and then pour the sauce over the chicken pieces. Now the crunchy chicken gets ready to serve.

Coca Cola Chicken Recipe
Ingredients
1. Whole chicken (1)
2. ginger paste (4tbsp)
3. garlic paste (2tbsp)
4. onion paste (2tbsp)
5. cumin powder (4tbsp)
6. coriander powder (2tbsp)
7. thin soya sauce (5tbsp)
8. thick soya sauce (2tbsp)
9. cloves (4)
10. clove flower (2)
11. coca cola (200ml)
12. cinnamon stick (1)
13. water (3c)
14. corn oil (6tbsp)
15. salt (1tbsp)
Method of preparation:-
1. Take chicken, clean it and then cut it into bite size pieces. Pour oil in the wok and heat the oil in it and then fry cinnamon stick, cloves and clove flower. When they get pop then add ginger, garlic and onion paste. Fry it until aroma arises.
2. Then add the cumin powder, coriander powder and then fry them on low heat for about 5 minutes. After 5 minutes put the chicken in the wok and mix it well. Now pour 3 cups of water, 1tablespoon of salt and cover it and then cook it until the chicken becomes tender.
3. Add thick and thin soya sauce and again cook it for about 5 minutes. In the end pour the coca cola into the gravy and then serve it with plain rice.

Tikka Kababs Recipe
Ingredients
1. Boneless meat (2lbs preferably from butter fried leg of lamb, cut into 2 “ cubes)
2. lemon juice (2tbsp)
3. chopped fresh ginger (1tbsp)
4. garlic (5flakes)
5. ground cayenne pepper (1tsp)
6. chopped onion (1small)
7. garam masala (2tbsp)
8. sour cream (4tbsp)
9. salt (to taste)
10. fresh coriander leaves (for garnish)
Method of preparation:-
1. Take a blender, make the puree of all the ingredients except coriander leaves and lamb. Take a knife or a skewer, pierce the cubes of lamb with it to make a visible hole in the meat. Now keep the meat to marinate properly.
2. Put the puree in the holes of the meat and then keep it to marinate overnight in the refrigerator. Place the kababs in a broiler pan to drain off the excess juices.
3. Now heat the oven to a full broil for about 15 minutes and then place the kababs in the oven. Broil them for about 15 minutes and then turn the sides and broil for another 15 minutes. Now take out the kababs from the oven. Garnish with fresh coriander leaves and serve them hot.

Kadai Gosht Recipe
Ingredients
1. Meat (1/2kg)
2. garlic paste (1tsp)
3. ginger paste (1tsp)
4. chopped tomato (6-7)
5. roasted and grounded whole coriander (1tsp)
6. roasted and grounded whole cumin seeds (1tsp)
7. green chillies (12-15)
8. yogurt (1/2c)
9. oil (1/2c)
10. red chilly powder (1-2tsp)
11. coriander leaves (for garnishing)
12. salt (to taste)
Method of preparation:-
1. Take a kadai, heat oil in it. Fry green chillies until the color gets changes slightly. Now take out the chillies from oil and keep them aside. Add mutton to the oil and fry it until it the color gets changes.
2. Take out the mutton from the kadai and keep it aside. Add ginger and garlic paste and chopped tomatoes to the oil. Cook it until the tomatoes get soft and then add mutton, red chili powder and salt.
3. Now add yogurt and keep it to cook until the oil comes out on the surface. Add cumin, green chilies, coriander and close the lid. Keep it to cook on very low heat for about 5 minutes. Garnish it with coriander leaves. Now the kadai gosht is ready.

Butter Chicken Recipe
Ingredients
1. Chicken drumsticks, thighs, sliced breast pieces (3lb)
2. sour cream (1c)
3. yogurt or butter milk (1c)
4. butter (4oz)
5. oil (1tbsp)
6. garlic paste (1tsp)
7. ginger paste (1tsp)
8. chili powder (3tsp optional)
9. tomato puree (1/2c)
10. cardamoms (6)
11. cloves (6)
12. salt (to taste)
13. cinnamon sticks (2)
Method of preparation:-
1. Take a large sauce pan, heat oil in it. Add ginger, garlic, cardamom, cloves and cinnamon in the pan and fry them until them for a minute on medium low heat.
2. Now add the chicken with yogurt or buttermilk, sour cream, tomato puree, chili powder and salt. Cover the pan with a lid and cook the chicken on medium heat for half an hour by stirring it occasionally.
3. When the chicken gets cooked then adds the butter in the chicken before serving. Serve it hot in a serving dish with rice or chapatti.
