Bajra Khichdi Recipe
Ingredients
Yellow moong dal (40gms), bajra (100gms), ghee (1tsp) and salt (1/2tsp).
Method of preparation:-
Take bajra and take out the husk from it and then soak it in a bowl for about 1 hour. Then grind the bajra coarsely in a mixer at very low speed. Add moong dal in it. Put this mixture in pressure cooker and add water and salt in it. Cook it for about 10 minutes. Mix hot ghee in it and add hot if it is needed. Now the bajra khichdi gets ready to serve. Serve it hot in a dish.

Rajasthani Daal Bati (Puffed Dough Dumpling With Lentil Curry) Recipe
Ingredients
For daal (Lentil Curry):- Whole black gram or urad (3/4c), rajma beans (2c), ginger garlic paste (1tbsp), finely chopped tomatoes (2), finely chopped onions (3), green chillies, slit lengthwise (20, finely chopped coriander leaves (1c), turmeric powder (1tsp), chili powder (2tsp), garam masala powder (2tsp), ghee (4tbsp), cream (2tbsp), oil and salt (to taste).
For Bati (dumplings):- Whole wheat flour, sieved 95c), curd (2tbsp), salt (to taste), melted ghee (1c).
Method of preparation:-
Take a pressure cooker, cook black garam and rajma in it until it becomes soft. Take a pan, heat oil of about 4 tablespoons in it. Add onions in it and fry them until they turn brown in color. Add tomatoes and ginger garlic paste in it and fry them and then add all the masalas, salt and beans and keep them to simmer until the gravy becomes thick. Add ghee and cream over it. Take a bowl, add flour, curd, ghee and salt in it. Add little water to make dough and then knead the dough to make it soft. Make small balls of dough. Cover them and keep them aside for about 1 hour. Then place them on the hot coals until they get puffed and spongy and turn golden in color. Keep them hot. Now take cooked daal in a bowl, garnish it with slit of green chillies and coriander leaves and then dip the hot bati in it and then serve it.

Chana Dal Paratha Recipe
Ingredients
Maida (500gms), chana dal (250 gms), oil (200gms), garam masala (1/2tsp), salt (to taste), red chili powder (to taste), dhaniya powder (1/2tsp).
Method of preparation:-
Take channa dal, soak it in a bowl for about 6 hours. Take a bowl, add maida, oil of 2 tablespoon and salt in it. Mix it and then add little water to make dough. Knead the dough to make it soft. Take pressure cooker, add 1 glass of water and then boil soaked channa dal for one whistle in it. Now take off the cooker from the heat and drain the water and then grind the cooked dal. Take a kadai, heat 2 tablespoon of oil in it and roast the dal paste in it for about 3 to 4 minutes. Mix all the masala in it and then take off the kadai from the heat and keep it to cool. When it gets cool then stuff this mixture into the balls of dough. Roll these stuffed balls of dough to make thin parathas. Cook the parathas on hot tawa and then serve them with chutney and raita.

Fish with Moong Dal Recipe
Ingredients
Moong dal (1c), finely chopped onions (1), finely chopped tomato (1), ginger paste (1tsp), garlic paste (1tsp), finely chopped green chilies (2), fish heads (2), turmeric powder (1tbsp), coriander seeds powder (1tsp), red chilies (3dry), bay leaves (2), cumin seeds powder (1tsp), cloves (4), cinnamon (1/4”)cardamom (2), garam masala (1tsp), lemon juice (1tbsp), hing (a pinch), black pepper (3), oil (for frying) and salt (to taste).
Method of preparation:-
Take dal, wash it and soak it in a bowl for half an hour. Cook the dal in pressure cooker with ½ teaspoon turmeric powder. Take fish heads and cut into big pieces. Marinate the fish head pieces with ½ turmeric powder, salt and lemon juice. Keep it aside for 45 minutes. Take a pan, heat the oil for frying. Deep fry the fish heads until get golden brown. Drain it and keep it aside. Take out the oil from pan keeping only approx. 3tablespoon of it. Add hing, bay leaves, cardamom, red chilies and black pepper. Add onion and fry until get transparent. Add garlic, ginger and green chilies. Keep it to simmer for 2 minutes. Add chopped tomatoes and keep it to simmer for 2 minutes. Add chopped tomatoes and keep it to simmer for 5 minutes. Add coriander powder and cumin powder. Now add the fish heads and keep them ti simmer until they get crumble. Add dal and 1 cup of water. Keep it to boil until you get the required consistency of curry. Sprinkle the garam masala and then serve it hot with rice.

Mung Dal Khichdi Recipe
Ingredients
Rice (1c), yellow mung dal (1/2c), oil (2tbsp), ground cumin and desiccated coconut powder (2tbsp), turmeric powder (1/2tbsp), asafoetida (a pinch), garam masala (1tbsp), dried red chilies (2-3), curry leaves (4 to 5), salt and sugar (to taste) and freshly grated coconut and coriander leaves for garnishing.
Method of preparation:-
Take dal and rice, clean them, wash them and then mix them together. Soak and then drain the rice mixture and then keep for 15 minutes. Take a pan, heat oil in the pan, add curry leaves, dried red chilies and asafoetida in the hot oil and then fry them. Add the soaked and drained rice and dal mixture and then add the turmeric powder and mix well. Now add 3 cups of hot water, garam masala, desiccated coconut powder, ground cumin, salt and sugar and then mix them well. Cook in the pressure cooker until it gets cooked and then garnish it with freshly grated coconut and chopped coriander leaves. Now the khicdhi is ready to serve.

Ingredients
Yellow moong dal (2/3c), chopped spinach (250gms), sliced tomatoes (2large), chopped onion (1), finely minced garlic cloves (4large), minced ginger (1tsp), coriander powder (1tsp), cumin powder (1tsp), turmeric powder (1tsp), lemon juice (1tsp), garam masala powder (1tsp optional).
Method of preparation:-
First cook the dal with 3 cups of water. Take a saucepan, heat oil in it and then add cumin seeds. Fry the seeds for a minute and then add sliced onions, minced garlic, minced ginger, coriander powder, cumin powder, garam masala powder, the chopped spinach leaves and sliced tomatoes in the pan. Cook them by stirring constantly on medium low heat. Now add the cooked dal with another 3 cups of water and turmeric powder in the pan. Cook until the mixture starts boiling. Add salt according to taste and lemon juice in the pan. Now turn off the heat and take off the pan from the heat. When it gets ready then serve it hot with chapatti.

Green Moong Dal Recipe
Ingredients
Green moong dal (2/3c), cumin powder (1tsp), coriander powder (1tsp), turmeric powder (1tsp), coriander powder (1tsp), garam masala powder (1tsp), minced ginger (1tsp), finely minced garlic cloves (4large), sliced tomatoes (2large), salt (2tsp or to taste).
Method of preparation:-
First cook the green moong dal with 3 cups of water. Take a saucepan, heat the oil in it. Fry cumin seeds in the oil for a minute and then add chopped onion, minced garlic, minced ginger, cumin powder, coriander powder and garam masala powder and sliced tomatoes. Cook them by stirring them constantly on medium low heat for about 10 minutes. Now add the green moong dal in the pan with another 3 cups of water and turmeric powder. Cook it until it gets boiling and then add the salt according to taste. Now turn off the heat and take out the pan from the heat. Garnish it with chopped coriander leaves and serve it with rice or chapatti.

Moong Dal Fry Recipe
Ingredients
Yellow moong dal (2/3c), cumin seeds (1tsp), minced ginger (1tsp), fine minced garlic cloves (4large), chopped onion (1), sliced tomatoes (2large), turmeric powder (1tsp), chopped coriander, salt (2tsp or to taste).

Then add the sliced onion, minced garlic, minced ginger and sliced tomato in the pan. Cook them by stirring constantly on medium low heat for about 10 minutes. Add dal in the pan with another 3 cups of water and the turmeric powder. Cook it until the mixture starts boiling and then add salt in it. Now turn off the heat and then garnish the dal immediately with sliced tomatoes and chopped coriander leaves. When it gets ready then serve it in serving bowl with boiled rice or chapatti.

Kali Dal (Whole Black Beans) Recipe
Ingredients
Mahdal or urad dal (1c),water, garlic (12cloves), ginger (1” piece), turmeric powder (1/4tsp), salt (to taste), ghee can be replaced by butter (2-3tbsp), garam masala (to taste) and green chilies (to taste optional).
Method of preparation:-
Take mah dal, clean it, wash it and then drain it. Boil water and then add the washed dal into the boiling water. Add half of the finely chopped ginger, garlic, turmeric powder, salt and pepper to taste. Keep the dal on medium heat to cook for about 2-3 hours or pressure cooks it at 15psi for ½ hour. Now uncover the pan and reduce the heat to low. Cook it further in the same pan for about ½ an hour and stir it constantly. Cook it until the creamy consistency is achieved. Take a small pan, heat the ghee in it add the sliced onions, remaining ginger and chili and fry them in the ghee until turn golden brown. Add the cumin seeds and coriander seeds. Now pour this fried masala in the cooked dal. Serve it hot with chapatti or rice.

Masur Dal Recipe
Ingredients
Moong – yellow or masur pink (1c), water (3 1/2c), onion (1small), ginger (1” piece), garlic cloves (2), turmeric powder (1/4tsp), ghee (2-3 tbsp), cumin seeds (1tsp), pepper (to taste) and salt (to taste).
Method of preparation:-
Take moong dal, wash it and then drain it. Take a sauce pan, boil water in it and add the dal, finely chopped ginger, garlic, pepper, salt and turmeric powder. Cover the pan, reduce the heat to low and simmer it for about 20 minutes. When the dal, gets cooked then take off it from the heat. Now take a small pan, place it over heat. Heat the ghee in it and then fry the cumin seeds until they get golden brown. Then add the thinly sliced onions, fry them until they turn brown and get crispy. You may add the finely chopped tomatoes and paprika to give color to dal. Now pour this fried masala into the pan of cooked moong dal. When it gets ready then serve it hot with rice or chapatti.
