Dal Payasam Recipe
Ingredients
1. Moong dal (1c)
2. raisins (1/4c)
3. coconut (1/2)
4. cashew nuts (1/4c)
5. grated jaggery (2c)
6. cardamom powder (1tsp)
7. ghee
Method of preparation:-
1. Take dal, wash it and drain it. Fry the dal in the hot ghee for about 2-3 minutes and then keep it aside. Fry the raisins and the cashew nuts in the ghee and then keep them aside.
2. Take the 5-6 coconut rings, Chop them in small pieces and then fry it in ghee and then keep it aside. Take the reaming coconut and grate it and then grind it with 1 cup of water.
3. Drain the coconut and reserve the milk of coconut. This will be thicker. Again add 1 cup of water to the drained coconut and grind it. Now squeeze out the milk and reserve it in separate bowl. Add this squeezed milk in the dal and then pressure cooks it.
4. In the same time, boil 1 ½ cup of water and then add jaggery in it. Keep on boiling until the liquid gets thick consistency. Pour this into the dal mixture and stir it well. Cook it for few minutes.
5. Add the fried coconut, cashews, raisins and the cardamom powder. Stir the mixture all the time while cooking. Now add the thick coconut milk and mix it well. Take off the pan from heat and serve hot. It tastes better if it serves too cold.

Dhal Makhani Recipe
Ingredients
1. Toor dal (1 1/2c)
2. chopped coriander leaves (2tsp)
3. tomatoes cut into large size pieces (2med.)
4. turmeric powder (a pinch)
For seasoning:-
1. Butter (1/2stick)
2. chopped onions (1small)
3. mustard seeds (1tsp)
4. hing (a pinch)
5. cumin seeds (1tsp)
6. red chilly powder (1tsp)
7. curry leaves (1sprig)
8. turmeric powder (1/2tsp)
9. chopped green chilies (4-5)
10. dhania powder (1tsp)
11. salt (to taste)
Method of preparation:-
1. Take toor dal, wash it and drain it and then add the dal and tomatoes with a pinch of turmeric powder in a cup of water until the dal gets soft. Add salt in it according to taste.
2. Take a saucepan, place it over heat. Heat the butter in it and then prepare the seasoning in it. First add the chopped onions in the heating butter. When the onions get fried then add all the other seasoning ingredients except the turmeric, red chilly and dhania. Fry until the onion begins to turn its color.
3. Now add the powders like red chilly, turmeric and dhania and fry them for a minute. Now take off the pan from the heat and then add the boiled dal with tomatoes to it.
4. Add the chopped coriander leaves in the dal and mix it well. Add the salt if necessary and 1 cup of water. Keep it for boiling. When it gets ready then serve it hot with plain rice or rotis.

Katirikka Rasavangi Recipe
Ingredients
1. One Bhima eggplant (brinjal)
2. mustard seeds (1/3tsp)
3. tamarind paste (1/2tbsp)
4. cooked toovar dal (1/2c)
5. coriander seeds (1 1/2tsp)
6. fresh coconut (4tbsp)
7. channa dal (1tsp)
8. curry leaves
9. asafoetida (a pinch)
10. a little oil for roasting and seasoning
11. salt (to taste)
Method of preparation:-
1. Cut the eggplant into cube slices. Dissolve the tamarind paste in a cup of water. Place it on heat, add eggplant to tamarind water and add salt and a little turmeric. Cook it until eggplant is done but not lost its shape.
2. Take a pan, place it over heat. Heat very little oil in it and then roast red chillies, asafoetida, coriander seeds and channa dal in it. When the red chillies get turn to dark red then take off the pan from the heat and keep it to cool.
3. Put it into the blender with coconut and 3 tablespoon of water and then grind it to paste. Now mash the cooked dal with a spoon until gets blended and adds it to the cooked eggplant.
4. Add the coconut paste and then keep it on low heat until it starts to simmer a little. Now take it off from the heat. Seasoning it with curry leaves and spluttering mustard seeds.

Mixed Dal Dosas Recipe
Ingredients
1. Rice (1c)
2. curd (2tbsp)
3. yellow moong (1/3c)
4. channa dal (1/3c)
5. udad dal (1/3c)
6. oil (2tbsp)
7. soda bicarb (1/2tsp)
8. oil to shallow fry
9. salt to taste
Method of preparation:-
1. Take rice and wash them. Now take all the three dals and wash them together. Soak in the plenty of water and then keep them aside for 5 to 6 hours.
2. Take wet dals mixture put it in the grinder to grind. Grind it until semolina type grain can be felt. Then grind the wet rice until get fine. Mix both the batters and add curd, soda, salt and oil in the batter. Mix this batter until it gets fluffy and light. Keep it aside for about 3 to 4 hours before making the dosa.
3. Now heat the griddle, and then pour a spoonful of batter in the center, spread with the back of the spoon to a thin round. Put a teaspoon of oil over it. Remove it with spatula when it gets crispy. Serve it hot with chutney.

Dal ka Seera Recipe
Ingredients
1. Moong dal or green dal (500gms)
2. ghee (500gms)
3. sugar (500gms)
4. saffron soaked in a little milk
5. water about 250ml
6. elaichi powder (1tsp)
Method of preparation:-
1. Take moong dal; soak it for about 5-6 hours. Wash and remove the skin of the dal. Take an electric grinder or a mixie to grind dal in it. Use a little water as possible while grinding the dal.
2. Take a pan put water with sugar in it and place it over heat to boil. When the sugar gets dissolve then adds a few tablespoon of milk in the pan. As the syrup starts boiling the scum will rise, remove it with strainer. Again boil it until the syrup becomes sticky or it gets one thread consistency.
3. Take off the pan from heat and then keep it aside. Take a heavy Kadai, place it over heat. Heat the oil in it and add dal, stir it to avoid burning until it gets golden brown and the ghee begins to separate.
4. Now pour the hot syrup into the kadai, add dissolved saffron and elaichi in it. Stir it very carefully. Cook it slowly until the water gets absorbed.
5. When it gets ready then places it in the serving dish and decorate it with chopped dry fruits. Serve it hot especially on a cold day.
