Raab Kanji Recipe
Ingredients
Wheat flour (1tsp), dried ginger powder (1tsp), water (1/2c), ghee (1/2tsp), cardamom powder (1tsp), jiggery (1tsp), milk (1c).
Method of preparation:-
Take a pan; place it over heat and then temperate ghee in it over low heat. Add wheat flour in it and fry it until it gets pinkish in color. When the flour gets fried then adds milk and water in the pan and then mix dried ginger powder in it. Mix it and add jiggery in it. Mix it properly. Now take off the pan from heat. Dust cardamom powder on it and then serve it hot. This recipe is good after illness.

Amlana Recipe
Ingredients
Tamarind (2tbsp), pepper powder (1/4tsp), cardamom powder (1/4tsp), salt (to taste), ice cubes (to serve) and black salt (1/2tsp), powdered sugar (8 to 10 tbsp).
For Garnish:- Chopped mint leaves (1tbsp).
Method of preparation:-
Take a bowl, add water of 1 cup in it and then soak tamarind in water for about 2 hours. Mash the tamarind with your hands and then strain it through a clean muslin cloth. Now add sugar, salt, black salt, cardamom powder and pepper powder in the strained mixture. Then add chilled water of about 3 cups in it. Mix it well. Serve it chilled in serving glasses by adding chopped mint leaves on the top.

Kairi Ka Pani Recipe
Ingredients
Raw mangoes (2 medium), ginger powder or soonth (1/4tsp), roasted cumin seeds (1tsp),salt (to taste), sugar (3/4c), black salt (1tsp).
Method of preparation:-
Take a vessel, put water in it and then add raw mangoes in water. Keep them to boil until they get soft. Take out the mangoes and then remove the skin from them. Mash the mango pulp in a bowl. Add salt, sugar, ginger powder, cumin seed powder and black salt in it. Mix them in the mango pulp. Put this mixture in a bottle and store it in the refrigerator. Take a serving glass, add 2 tablespoon of this mixture and then fill the glass with chilled water. Stir the mixture with spoon and then serve it.

Basundi Recipe
Ingredients
Ricotta cheese (2qrt), milk (1c), cardamom powder (1tsp), little saffron, sugar (2c), pack of half-n-half (1small).
Method of preparation:-
First heat the oven to 325 degrees F for 10 minutes. Do not remove the excess water from the ricotta cheese. Take a bowl, place the cheese in it with 1 cup of sugar and mix it well. Now put the mixture in the aluminum foil pack, place it in the oven and bake it at 350 degrees f for about 35 minutes. Take a saucepan, add milk and half-n-half and then boil it on low heat for about 15 to 20 minutes. Add the remaining sugar, saffron and cardamom powder to it. Take out the cheese from the oven after 35 minutes. Which will appear to be in a soggy consistency? Put the cheese in the freezer for about 10 minutes to cool it. Take out the cheese from the freezer and put it slowly in the boiling milk and then keep it to cool for about 10 minutes. Now store it in the freezer until serving.

Strawberry Milk Shake Recipe
Ingredients
Fresh strawberry (250gms), sugar (to taste), fresh milk (1littre) and strawberry ice-cream.
Method of preparation:-
Take strawberry, wash it and then chop it finely. Take a blender; put the chopped strawberry, sugar and a cup of milk in the blender. Blend it to make a smooth paste. Add the remaining milk and again blend it. Now strain it with a mesh into a large jar. Keep the shake in the refrigerator for at least 2 hours to cool it. When the shake gets chilled then pour the shake in long glasses and then serve it with a scoop of strawberry ice-cream.

Melon Pineapple and Grape Cocktail Recipe
Ingredients
Watermelon (1/2small), grape juice (1/2c), green grapes (250gms), pineapple (1/2small), chaat masala (1tsp), fresh mint leaves (for garnish).
Method of preparation:-
Take watermelon and pineapple. Pare the skin of watermelon and pineapple with a sharp knife. Scoop out the small balls from the peeled melon by using a parisienne scoop and cut the pineapple into small pieces with a knife. Take grapes and mint leaves, wash them and then cut the grapes into halves. Now take serving glasses. Mix all the fruits in the glasses one by one and then pour the grape juice over the fruits. Sprinkle the chaat masala over the fruits in the glasses and then garnish it with the fresh mint leaves and then serve the cocktail when it gets chilled.

Pista Doodh Recipe
Ingredients
Pistachios (1 1/2c), sugar (1c), milk (5c) and green cardamom powder (2tsp).
Method of preparation:-
Take pistachios; keep them in warm water in a bowl for sometime to blanch them. Then grind one cup of pista with a little milk to make a coarse paste. Silver the remaining pistachios. Take a pan, place it over heat and then heat the milk in it and then keep it to boil. Now reduce the heat to low and keep it to simmer until it reduces slightly. Add the pista paste in the boiled milk and cook it until it gets thickens. Add sugar in the milk and mix it properly until the sugar gets dissolve. Now add the green cardamom powder and again mix it. Take off the pan of milk from the heat and then pour the pista milk into the glasses and then serve it hot.
Cooking time – 20 minutes

Malai Aur Pedewali Lassi Recipe
Ingredients
Yogurt (4c), milk (1c optional), malai peda (4), thick cream or fresh malai (4tbsp), sugar (1c) and ice cubes (as required).
Method of preparation:-
Take a bowl, put yogurt in the bowl. Add sugar and whisk it for about 10 minutes until the sugar gets dissolves. Add a little milk and whisk it . Add the ice cubes and then keep it aside for 2 to 3 minutes so that the mixture gets chilled. Now take four tall serving glasses and then pour the lassi in the glasses. Take thick cream or fresh malai, add 1 tablespoon of cream to each glass. Now take malai pedas and crumble them in a bowl. Sprinkle the crumbled pedas in each glass and then serve the malai and pedewali lassi immediately.
Cooking time – 15 to 20 minutes

Gajar Kanji Recipe
Ingredients
Carrots (4large), coarse, red chili powder (1 1/2tbsp), coarse mustard powder (4tbsp), beetroot (1med.) and salt (to taste).
Method of preparation:-
Take carrots and beetroot and scrub them and then wash them under running water. Then peel and cut them into batons. Take a bowl; put the carrot and beetroot batons in a bowl. Add coarse mustard powder, coarse red chili and salt and then mix them. Add the 18 cups of water and stir it. Cover the bowl with a muslin cloth and then tie it round the rim. Keep it in the sun for 3 to 4 days. When the gajar kanji gets ready then keep it in the refrigerator and serve it chilled in the serving glasses.
Cooking time – 3 to 4 days

Pineapple Aabshola Recipe
Ingredients
Pineapple (1med.), powdered sugar (1/4c), crushed black peppercorns (6-8), lemon grass (4stalks), lychees (2), fresh mint leaves (4-6) and black namak or kala salt (to taste).
Method of preparation:-
Take mint leaves, wash them, peel and slice the pineapple thinly. Sprinkle the powdered sugar over the fresh pineapple slices. Arrange these slices in a tray and then heat them by turning over time to time until they get caramelize or about 5 minutes. Add some water and again cook for about 3 minutes. Now put these cooked slices in a blender with lychees and blend them. Put the caramel liquid and again blend it. Add black salt and the mint leaves and again blend it. Add crushed peppercorns and ice cubes and again blend it. Take a stemmed glass pour the liquid in it. Put a lemongrass stalk as a stirrer and serve it chilled.
