Rangbirangi Squash Recipe

Ingredients
1. Khus syrup (1/4c)
2. orange squash (1/4c)
3. lemon juice (1/2c)
4. sugar (1c)
5. rose syrup (1/4c)
6. fresh mint leaves (to garnish)
7. water (1c)

Method of preparation:-
1. Take three different bowls. Put khus syrup, rose syrup and orange squash in these bowls. Add a little water to make it dilute slightly. Pour this liquid in three separate trays and then set it in the freezer.

2. Take a pan, heat equal quantity of sugar and water in a pan and make syrup. Keep it aside to cool. Now take serving glasses and pour some lemon juice in these glasses. Add a little sugar syrup to each of the serving glass.

3. Place some of the colored ice cubes in the glasses and top with a little water. Garnish the squash with a spring of mint leaves and serve it immediately.

Mixed Fruit Lassi Recipe

Ingredients
1. Pear (1med.)
2. apple (1med.)
3. honey (2tbsp)
4. apricot preserve (2tbsp)
5. yogurt (2c)
6. fresh mint leaves (4)

Method of preparation:-
1. Take a pear and an apple of medium size. Wash them properly and then chop them into small pieces. Take a blender. Blend the chopped pear and apple in a blender. Blend it properly.

2. Add the yogurt, honey and the apricot preserve. Again blend it until the mixture gets smooth. Add a cup of ice cubes and again blend it. Now add the mint leaves and again blend it.

3. When the mixed fruit lassi gets ready then take the serving glasses and pour it in the glasses and serve it chilled. Fruits and honey use the nutrient value of this tasty lassi.

Lassi Recipe

Ingredients
1. Yogurt (2 1/2c)
2. sugar (1/2c)
3. milk (1/2c optional)
4. ice cubes (as required)
5. fresh cream (as required)

Method of preparation:-
1. Put the yogurt and sugar in the blender or a mixer and then blend them together for about 2 minutes. Add the ice cubes and again blend it for more 1 minute. If the mixture is too thick then add a little milk and adjust the consistency and blend it again.

2. When the lassi gets ready to serve then take serving glasses and then pour the lassi into the glasses from a height to make foam in the lassi. Top the prepared lassi with cream and serve it chilled.

Pudina Chaas Recipe

Ingredients
1. Yogurt (1 1/2c)
2. crushed dry mint leaves (1tsp)
3. roasted cumin powder (1tsp)
4. peeled ginger (1 inch piece)
5. torn, fresh mint leaves (4tbsp)
6. green chili (1)
7. ice cubes (as required)
8. sea salt (to taste)

Method of preparation:-
1. Take fresh mint leaves, ginger, green chili and grind them with them with sea salt together to a coarse paste in a mortar with a pestle.

2. Put this paste in the yogurt and the blend it with roasted cumin powder and the four cups of water. Take four serving glasses and pour the chaas equally in them. Add ice cubes; garnish the chaas with fresh mint leaves and serve it immediately. Enjoy this drink in summer.

Pichkari Thandai Recipe

Ingredients
1. Full cream milk (1 1/2litres)
2. khus syrup (1/2c)
3. soaked poppy seeds or khuskhus (3tbsp)
4. soaked melon seeds or magaz (3tbsp)
5. cashew nuts (10)
6. blanched and peeled pistachios (40-50)
7. blanched and peeled almonds (15)
8. black peppercorns (8-10)
9. cinnamon (1” stick)
10. dried rose petals (20-25)
11. green cardamoms (8-10)
12. saffron or kesar (a few strands)
13. sugar (1/2c)
14. chilled milk (1glass)

Method of preparation:-
1. Take a thick bottomed pan. Boil milk in the pan. Add sugar and saffron and then keep it to simmer on low heat for 5 minutes. Take off the pan from heat and keep it aside.

2. Make a fine powder of green cardamom, cinnamon, dry rose petals and peppercorns. Add this powder to the milk. Now make a smooth paste of almonds, cashew nuts, poppy seeds, pistachios, melon seeds by grinding them with one glass of chilled milk. Add this paste into the milk and then mix it thoroughly.

3. Now take serving glasses and make a design on the inside of the glasses with the mixed fruit jam. Pour some of the khus syrup into the glasses and then top up with the prepared milk. Serve it when it gets chilled.

Cold Coffee Recipe

Ingredients
1. Milk (3c)
2. melted chocolate (4tbsp)
3. sugar (2tbsp)
4. filter coffee decoction (1/4c)
5. vanilla ice-cream (3-4scoops)
6. ice cubes (as required)

Method of preparation:-
1. Take a mixer, put milk, filter coffee decoction and sugar in the mixer and blend it. Add ice and then again blend it. Add the vanilla ice cream and the melted chocolate; blend it again in the mixer for about 1 to 2 minutes.

2. Now take the serving glasses. Coat the inner sides of the glasses with the remaining melted chocolate. Pour the prepared cold coffee in the chocolate coated glasses. Serve the coffee when it gets chilled.

Black Grape Sherbet Recipe

Ingredients
1. Black grape juice (4c)
2. tamarind pulp (1 1/2tbsp)
3. black salt or kala namak (3tsp)
4. fennel seeds (1tsp)
5. caram seeds or ajwain (1/2tsp)
6. cumin seeds (3/4tsp)
7. crushed ice (as required)
8. black grapes and green grapes (for garnish)

Method of preparation:-
1. Take a pan, place it over heat. Dry roast the cumin seeds, caram seeds and fennel seeds for 1 to 2 minutes. Grind the roasted spices with black salt to make a fine paste.

2. Take black grape juice and then pour it in a jug. Add the tamarind pulp and the ground spices in the jug of juice and then mix it well. Now add the crushed ice in the juice.

3. Take the old fashioned glasses, put crushed ice as required and pour the prepared black grape juice in the glasses. Garnish it with green and black grapes.

Aam Ki Lassi (A Sweet Mango Yogurt Drink) Recipe

Ingredients
1. Mango (1)
2. green cardamom powder (a pinch)
3. sugar (1tbsp)
4. yogurt (1c)
5. saffron or kesar (2-3strands)
6. ice cubes (as required)

Method of preparation:-
1. Take a mango, wash it, peel it and take out the seed from the mango and then make the puree of the mango pulp.

2. Take a bowl, put the puree in the bowl. Put yogurt, cardamom powder, sugar and ice cubes in the same mixer and then blend the mixture for about 1 minute in the mixer.

3. Now add the mango puree in the yogurt mixture and blend it for about half a minute on the minimum speed. Pour the drink in a bowl, place it in the refrigerator to cool it. Garnish the drink with saffron strands and then serve it chilled.

Aam Ka Abshola (Sweet and Sour Mango Drink) Recipe

Indian Beverages and Soups
Ingredients
1. Raw mangoes (1kg)
2. lemons cut into roundels (2)
3. crushed black peppercorns (1tsp)
4. powdered sugar (1c)
5. roasted cumin powder (2tsp)
6. rock salt (to taste)
7. fresh mint leaves (6-7)
8. salt (to taste)
9. water (2c)

Method of preparation:-
1. Take serving glasses, place them in the refrigerator to be chilled. Take raw mangoes, boil them and peel them and then extract the pulp from the boiled mangoes. Take mint leaves, keep a few of the mint leaves for garnish and grind the rest of the leaves.

2. Take a pan, mix the pulp of raw mangoes, rock salt, salt and sugar with 2 cups of water in the pan. Cook them for about 1 minute on high heat. Add the crushed peppercorns, roasted cumin powder and ground mint leaves. Stir the mixture and cook it for 2 to 3 minutes.

3. Take off the pan from the heat and then sieve the mixture. Coat the rim of the chilled glasses with a piece of lemon and dab them on a bed of salt. Now pour the prepared drink into the glasses and then top it with the chilled soda. Garnish the drink with mint leaves and a lemon wedge. Serve the drink when it gets chilled.

Badam Doodh Recipe

Ingredients
1. Milk (4c)
2. blanched and roughly chopped almonds (1/4c)
3. honey (3-4tsp)
4. nutmeg powder (a pinch)
5. green cardamom powder (a pinch)
6. silver warq (1-2 sheets)

Method of preparation:-
1. Take a thick bottomed vessel. Heat the milk in it and keep it for boiling. Now reduce the heat to low and add the chopped almonds. Keep it to simmer on low heat for about 15 to 20 minutes.

2. Add cardamom powder and the nutmeg powder and again keep it for boiling for 2 to 5 minutes. Now take off the pan from the heat. Add honey in the milk and mix it well.

3. When the badam doodh gets ready then serve it warm in glasses and then garnish it with silver warq.
