Green Onion Egg Bhurji Recipe

Indian Eggs Recipes

Ingredients
1. Eggs (3)
2. small bunches of green onions (4)
3. turmeric powder (1/2tsp)
4. chilli powder (1tsp)
5. oil for frying
6. salt (to taste)

Method of preparation:-
1. Take green onions, clean them and cut the green bulb from the green leaves and then finely chop the bulbs. Keep them aside. Finely chop the leaves.

2. Take a wide mouthed pan, heat oil in it and then saute the chopped onion bulbs for sometime until they get soft. Now add the chopped leaves and mix them well. Reduce the heat to low and then cook until the leaves get soft.

3. When the leaves get cooked thoroughly then add the chili powder and turmeric powder. Mix it well. Beat the eggs in a bowl and then add to the bowl. Mix the whole mixture until the eggs get cooked and the mixture gets dry. Add salt to taste. Serve it hot with roti.

Egg Biryani Recipe

Ingredients
1. Basmati rice (1/2kg)
2. eggs (8)
3. clarified butter (6tbsp)
4. biryani masala powder (1tbsp)
5. fresh coriander leaves (1tbsp)
6. mint (1bunch)
7. oil (1tbsp)
8. ginger and garlic paste (1tbsp)
9. onion (1big)
10. fried onion (1tbsp)
11. green chilies (4)
12. plain yogurt (1c)
13. garam masala and salt (to taste)

Method of preparation:-
1. Take rice, wash them and then soak them in water for about 30 minutes. Meanwhile boil the eggs in a pan. Take out the outer shell of the boiled egg and then cut the white portion of each egg into four long pieces.

2. Take a kadai, heat oil or the clarified butter in it. Add spices and then fry the onions until they turn golden brown and add the ginger and garlic paste, mint, coriander, green chilies, biryani masala and curd. Cook the mixture and then add half times of water to rice and then keep it to boil.

3. Now add the soaked rice and mix it well. Cover the kadai and cook it until the rice is cooked. Then add besan, red chili, eggs, salt and garam masala. Fry it until the eggs get coated with the spices and then take out the eggs and keep them aside.

4. When the air holes get appear on the rice surface then reduce the heat to low. Cook it until all the water gets absorbed and the rice is tender. When the rice gets ready then top the rice with eggs and serve hot with salad.

Egg Pudding Recipe

Ingredients
1. Eggs (5)
2. sugar (1/4c)
3. butter (1/4c)
4. vanilla (1tsp)
5. milk (1/2l)
6. all purpose flour (1/2c)

For hard sauce:
1. Butter (1/3c)
2. nutmeg powder (a bit)
3. powdered sugar (1c)
4. vanilla (1/2tsp)

Method of preparation:-
1. Take a small pan, heat it and then put butter in it. When the butter melts then add flour and sugar in it. Add milk to it and stir it. Cook the butter and milk mixture for about 5 minutes and then take off the pan from heat.

2. Take a large bowl, beat eggs in this bowl. Add the beaten eggs in the butter milk mixture and keep on stirring. Now add vanilla to this mixture.

3. Take a pudding dish, put the mixture in the dish. Heat the oven at 350 degrees F. Keep the pudding dish in a pan of water in the oven. Bake the pudding for about 40 minutes. When the pudding gets ready then serve it with hard sauce.

How to make hard sauce.
1. Take a bowl, beat butter in it until it gets fluffy. Add sugar in the butter while beating it. Add vanilla and keep on beating it.

2. Now pour the sauce over the egg pudding and sprinkle a bit of nutmeg powder.

Andewale Pakode Recipe

Ingredients
1. Peeled and grated boiled eggs (8)
2. chopped green onions with spring (3)
3. chopped ginger (2” piece)
4. chopped green chillies (4-5)
5. gram flour (3tbsp)
6. oil (for deep frying)
7. soda bicarbonate (1/4tsp)
8. chopped fresh coriander leaves (3tbsp)
9. red chilli powder (1/2tsp)
10. cumin powder (1/2tsp)
11. chaat masala (1tsp)
12. salt (to taste)

Method of preparation:-
1. Take a bowl, mix grated eggs, gram flour, chopped ginger, spring onions with greens, green chillies, cumin powder, red chilli pwder, chaat masala, coriander leaves, soda bicarbonate and salt in the bowl. Mix all the ingredients with a little water.

2. Take a kadai, heat oil in it for frying. Dip two tablespoons in the oil, fill one tablespoon with the egg mixture and shape it like an egg with other spoon and then gently slide it into the hot oil. Fry the pakoras in the hot oil until gets golden brown.

3. Turn the pakoras occasionally while frying. Drain them from the oil and place on the paper towel. Serve them hot with green chutney or tomato ketchup.

Tomato and Cheese Omelets Recipe

Ingredients
1. Eggs (2large)
2. oil (1tbsp)
3. finely chopped onion (1small)
4. pepper jack cheese, cut into 4 strips (1slice)
5. halved cherry tomatoes (12)
6. finely chopped green chili (1)
7. coriander leaves (3tbsp)
8. salt and pepper (to taste)

Method of preparation:-
1. Take 2 large eggs. Break them and put them in a bowl. Now beat the eggs with a spoon or a beater.

2. Take another bowl; add chopped onions, cherry tomatoes, chopped green chili, coriander leaves, salt and pepper to taste in the bowl. Add the beaten eggs in the bowl; mix the eggs with all other ingredients.

3. Take a non stick frying pan, heat the oil in it. Add the egg mixture with the cheese strips in the pan. Now place the cherry strips evenly over the pan. Cover the pan and cook it until the omelets get cooked. When the omelets get cooked then serve it hot in a serving dish.

Omelet Curry Recipe

Ingredients
1. Eggs (4 made into omelets)
2. pureed tomato (1)
3. boiled potato, cubed (1)
4. oil (1tbsp)
5. pureed onion (1)
6. turmeric powder (1tsp)
7. chili powder (1tsp)
8. ginger paste (1tsp)
9. garlic paste (1tsp)
10. coriander leaves (for garnishing)
11. salt and pepper (to taste)

Method of preparation:-
1. Take a non stick frying pan, place it over heat. Heat the oil in it.Add pureed onions, pureed tomatoes, ginger and garlic paste in the pan. Fry them together for about 5 minutes.

2. Add boiled potato cubes, omelets of 4 eggs, turmeric powder, chili powder and salt in the pan. Cook them together with a cup of lukewarm water for about 25 minutes on medium low heat.

3. When the omelet curry gets cooked then take off the pan from the heat. Then put it in the serving bowl and garnish it with chopped coriander leaves and serve it hot.

Egg Cooked With Meat and Fried (Nargisi Kofta) Recipe

Ingredients
1. Ground lean meat (1lb)
2. water (3/4c)
3. chopped onion (1/4c)
4. chopped ginger (1” piece)
5. chopped garlic (4cloves)
6. salt and pepper (to taste)
7. turmeric (1/2tsp)

To mix with meat:-
1. Besan (4tsp)
2. oil for frying
3. egg for mixing and coating (1)
4. hard boiled eggs (6)
5. yogurt (1tsp)
6. garam masala (12tsp)

For curry:-
1. Chopped onion (2)
2. green onion (1)
3. chopped tomatoes or paste (2)
4. chopped ginger (1” piece)
5. chopped garlic (8cloves)
6. turmeric (1/4tsp)
7. coriander leaves (10-15)
8. garam masala (1/2tsp)
9. salt and pepper (to taste)
10. oil or ghee

Method of preparation:-
1. Take a pressure cooker, heat the water in it and then add the meat, garlic, ginger, onion, turmeric, salt and pepper. Pressure cooks it for about 10 minutes or at 15psi.

2. Now reduce the pressure and drain half the liquid. Add besan and cook for about 10 minutes. Knead until the besan gets slightly sticky. Add egg yolk, yogurt and garam masala and then knead it well.

3. Take hard boiled eggs, coat them in this kneaded mixture and deep fry them in hot oil. Take a pan, heat ghee in it and fry the onions to a golden brown. Then add tomatoes, garlic, ginger and yogurt and then fry them well until it becomes like a paste of masala.

4. Add 1 ½ cup of water and green sprigs of onion cover the pan and cook for 10 minutes. When the curry gets ready then pours it in the serving dish and cut the koftas in half and arrange them over the curry.

5. Cover and bake for 15-20 minutes at 250 degrees F. Garnish it with chopped coriander leaves and the garam masala and then serve it.

Oatmeal Raisin Cookies Recipe

Ingredients
1. Sifted flour (3/4c)
2. baking soda (1/4tsp)
3. sugar (1/2c)
4. eggs (2)
5. quick cooking oatmeal (1 1/2c)
6. orange rind (1tbsp)
7. brown sugar (1/2c)
8. walnuts (1/4c)
9. softened margarine or butter (1/2c)
10. salt (1/2tsp)
11. vanilla extract (1tsp)

Method of preparation:-
1. Take a large bowl, mix all the dry ingredients together in it.Mix them properly.

2. Take another bowl, beat butter and sugar in it until gets fluffy. Beat the eggs and the vanilla extract in it until gets well blended. Now add the flour mixture in it.

3. Mix it properly until it gets well moistened. Add the quick cooking oatmeal, nuts and the rind in it. Mix them well. When the mixture of all these ingredients gets ready then take a cookie sheet. Grease it properly.

4. Drop the mixture with a teaspoonfuls on the greased cookie sheet about 2 inches apart. Place the sheet in the oven and bake it for 8-10 minutes at 350 degrees F. turn its side while cooking.

5. When the cookies get baked from both sides then take off the sheet from the oven and keep them to cool. Store them in airtight container.

Eggs In Spicy Cream Sauce Recipe

Ingredients
1. Vegetable oil (3tbsp)
2. hard boiled eggs halved (6-8)
3. finely chopped onion (2oz)
4. chicken stock (1/4pt)
5. grated ginger (1”cube)
6. tomato paste (2tsp)
7. finely chopped fresh green chilli (1)
8. garam masala (1/2tsp)
9. salt (1/2tsp)
10. single cream (1/2pt)
11. cayenne (1/8tsp)
12. lemon juice (1tbsp)
13. ground roasted cumins (1tsp)
14. chopped fresh coriander (for garnish)

Method of preparation:-
1. Take a large frying pan, heat the oil in it over medium heat. Add onions to the hot oil, stir and fry them for about 3 minutes until the onions get brown. Put the ginger and the chilli.

2. Stir and fry it for a minute. Put the cream, ground roasted cumin, lemon juice, cayenne, garam masala, salt, chicken stock and tomato paste. Mix it thoroughly and keep it on low heat to simmer.

3. When the sauce gets ready then put all the boiled egg halves into the sauce in a single layer with cut side up. Put the sauce over them and cook for about 5 minutes over medium heat. Again put the sauce over the eggs. Sprinkle the fresh coriander on the top and serve it in the serving dish.
