Mutton Yakhni Recipe
Ingredients
1. Sliced fresh lean lamb shoulders (2lbs)
2. water (2c)
3. cloves (6)
4. ground fennel seeds (2tsp)
5. ginger powder (1tsp)
6. ground cumin seeds (1tsp)
7. bay leaves (3)
8. thick yogurt (1c)
9. crushed cardamom pods (4)
10. sour cream (2tbsp)
11. ghee (1tbsp)
12. minced onion (1med.)
13. finely chopped fresh ginger (1tbsp)
14. saffron (a pinch)
15. salt (to taste)
Method of preparation:-
1. Take a saucepan, boil lamb, cloves, cumin, ginger powder, fennel seeds, bay leaves in water on high heat. Reduce the heat to medium, cover the pan and then cook the lamb until it gets tender.
2. There should be about half cup of water left when the lamb gets cooked. If the water dries up while cooking then add more water. Stir it once or twice so that the lamb does not stick to the pan and burns. Now add yogurt and sour cream to the lamb and then stir it well.
3. Raise the heat to medium high and again boil it and add cardamom and salt in it. Take off the pan from heat and keep it aside.
4. Take another pan, heat ghee in it. Fry onions and ginger until get brown and add to the lamb. Add saffron to the lamb, stir it and cover it and again cook it for about 10 minutes. Yakhni gives good flavor if it kept overnight and then served.

Mutton Fry Recipe
Ingredients
To pressure cook:
1. Washed mutton (1lb)
2. ginger garlic paste (1/2tbsp)
3. cinnamon (1inch)
4. cardamom (1)
5. clove (1)
6. turmeric powder (1tsp)
7. chilli powder (2tbsp)
8. water (as required)
9. salt (to taste)
Other ingredients:
1. Green chillies (3)
2. stem curry leaves (1)
3. garam masala powder (1tbsp)
4. ginger garlic paste (1/2tbsp)
5. chopped onion (1c)
6. oil (3tbsp)
7. cilantro leaves (to garnish)
Method of preparation:-
1. Take a pressure cooker, add all the ingredients of pressure cook. Close the cooker and pressure cook the mutton in it.
2. Take a kadai, heat oil in it and add curry leaves, slit green chillies and then add the chopped onions. Fry them until gets brown and then add ginger-garlic paste and again fry them.
3. Now add cooked meat, garam masala powder and mix them. Stir it and fry it well until the water gets evaporated and mutton turns brown. When it gets ready then garnish it with cilantro leaves.

Methi Mutton Recipe
Ingredients
1. Mutton chops (1/2kg)
2. well beaten yogurt (1c)
3. finely chopped fresh methi (1/2c)
4. cubed potatoes (2)
5. finely chopped coriander leaves (3/4c)
6. cubed tomato (1)
7. kashmiri chillies (4)
8. pepper corns (8)
9. cloves (3)
10. green chillies (3-4)
11. sprigs mint leaves (2)
12. poppy seeds (1tsp)
13. ginger garlic paste (1tsp)
14. crushed dried methi leaves (1tsp)
15. ghee (for frying)
16. cumin seeds (1tsp)
17. cinnamon stick (2.5cm)
18. salt (to taste)
Method of preparation:-
1. Take a pan, roast cardamom, cinnamon stick, coriander seeds, cloves, cumin seeds, poppy seeds, red chillies in it. Blend them in a blender to make fine powder.
2. Fry onions and green chillies with a little ghee and then blend them with a half cup of mint leaves, coriander leaves and powdered spices to make a fine paste.
3. Heat ghee in a pan add the mutton pieces and then fry them for a minute. Add half cup of water and then add yogurt and mix them well. Add potato and tomato pieces and then cover the pan with a lid. Cook it until the mutton gets cooked.
4. Now uncover the pan and add dry fenugreek leaves. Reduce the heat to low and keep it to simmer for few minutes. Garnish it with remaining coriander leaves and serve it hot.

Mutton Gravy Recipe
Ingredients
1. Mutton (1lb)
2. water (3c)
3. curry leaves (a few)
4. red chillies (4)
5. oil (2tsp)
6. coriander leaves (for garnish)
7. coriander powder (2tsp)
8. chopped onion (1)
9. salt (to taste)
Paste of:-
1. Chopped tomatoes (3)
2. garlic pods (4)
3. cumin seeds (1/2tsp)
4. whole pepper (1tsp)
5. ginger (a small piece)
Method of preparation:-
1. Take mutton in a bowl, clean it and wash it and then keep it aside. Take a pressure cooker, put cleaned mutton in it along with chopped onion and cook it until 2 whistle. Add the prepared masala paste to the mixture in the cooker.
2. Now add oil, curry leaves, salt, red chillies, coriander powder in the cooker. Keep the gravy to boil on low heat until it gets thick. Now the mutton gravy gets ready.
3. Put it in a bowl from the pressure cooker and garnish it with chopped coriander leaves and then serve it hot with plain rice or chapatti.

Tomato Mutton Recipe
Ingredients
1. Mutton (500gms)
2. chopped tomatoes (500gms)
3. ginger (1 small piece)
4. peppercorns (1/2tsp)
5. red chillies (8-10)
6. finely chopped onions (2-3)
7. garlic (4cloves)
8. cumin seeds (1tsp)
9. oil (for frying)
10. salt (to taste)
Method of preparation:-
1. Take a mixer, mix together red chillies, ginger, cumin seeds, garlic, pepper corns in it and blend them to make a fine powder of it. Take mutton pieces, clean them and then marinate them in the above ground powder for about 30 minutes.
2. Take a heavy bottomed pan, heat oil in it. Fry onions in it until gets brown then add chopped tomato and salt and then add the marinated mutton in the pan and mix it well.
3. Add a little water and then cook the mutton until it gets tender. Noe take off the pan from the heat and serve it hot with plain rice or any type of pulao.

Dry Mutton Recipe
Ingredients
1. Mutton (500gms)
2. curd (1c)
3. turmeric powder (1tsp)
4. minced garlic cloves (10)
5. mustard oil (1c)
6. bay leaves (2)
7. garam masala powder (1tbsp)
8. grated ginger (1” piece)
9. salt (to taste)
Method of preparation:-
1. Take a large bowl, beat curd in it. Put mutton pieces in curd with 1 tablespoon of oil, turmeric powder and salt. Keep it to marinate for about 2 hours.
2. Take a kadai, heat oil in it. Add ginger, garlic and bay leaves. Fry them for few minutes and then add the marinated mutton pieces. Reduce the heat o low and cook it for about half an hour until the pieces get tender.
3. Mix garam masala and stir it properly. When the mutton gets tender and almost dry and removes it from the heat. Now the dry mutton is ready to serve.

Mutton Chops Recipes
Ingredients
1. Mutton chops (1/2kg)
2. ginger (75gms)
3. chopped coriander leaves (1/2c)
4. chopped tomatoes (200gms)
5. coriander powder (2tsp)
6. chopped green chillies (a few)
7. nutmeg (a pinch)
8. ghee or oil (3tbsp)
9. garam masala (1/2tsp)
10. curd (1 1/2c)
11. red chilly powder (1/2tsp)
12. salt (to taste)
Method of preparation:-
1. Take a pressure cooker. Put mutton chops, tomatoes, chillies, coriander leaves and salt in it and cook it for about 5 minutes. Add ghee or oil and again fry it for 10 minutes.
2. Take curd in a bowl, mix all the spices, garam masala, red chili powder, coriander powder and nutmeg in the curd. Beat the mixture properly. Add this curd mixture to the chops and saute it for about 3 minutes.
3. Then cook it in the pressure cooker for about 3 to 5 minutes. Now mutton chops are ready. Garnish it with chopped coriander leaves and serve it hot.

Mutton Kolhapuri Recipe
Ingredients
1. Mutton (1kg)
2. turmeric powder (1tsp)
3. kolhapuri masala (4tsp)
4. ginger (1)
5. fried lavangi chillies (3)
6. fresh coriander leaves (for garnish)
7. garam masala (1tbsp)
8. garlic cloves (4)
9. kolhapuri masala (4tsp)
10. chopped onions (4large)
11. salt (to taste)
Method of preparation:-
1. First make the paste of garlic and ginger. Take a pan, heat oil in it and fry chopped onions until it turns golden brown. Add the ginger- garlic paste and mix it for a while.
2. Now mix grated coconut, kolhapuri masala, garam masala, turmeric powder and fried lavangi chillies. Add mutton in the masala and keep it fry until it turns brown. Add water if needed and then add fried spices in mutton.
3. Cook it until the mutton gets smooth. When the mutton gets ready then garnish it with coriander leaves. Serve it hot with rice.

Mutton Pepper Fry Recipe
Ingredients
1. Mutton (1/2kg)
2. mustard seeds (1tsp)
3. ginger (1tbsp)
4. green chillies (6)
5. turmeric powder (1tsp)
6. curry leaves (1sprig)
7. garam masala (1tsp)
8. chilly powder (2tbsp)
9. pepper (1tbsp)
10. ginger garlic paste (1tbsp)
11. shallots (1c)
12. coconut oil (1/4c)
13. coriander powder (2tbsp)
14. salt (to taste)
Method of preparation:-
1. Take mutton, wash it and then cut it into small pieces. Cook mutton in a pressure cooker with ginger-garlic paste, coriander powder, chilly powder, turmeric and salt.
2. Take a pan, heat oil in it, add mustard seeds and keep them to splutter. Add shallots, green chilies and ginger. Fry them until the mixture turns golden brown. Now add the cooked mutton and cook it again until it gets roasted.
3. Mix garam masala and pepper. Saute it again for about 2 minutes. Now the mutton pepper fry is ready to serve. Garnish it with curry leaves and then serve it hot.

Mutton Liver Fry Recipe
Ingredients
1. Mutton liver (1kg)
2. ghee (2tbsp)
3. chopped onion (1)
4. chopped tomato (1)
5. water (1/2c)
For marinate:-
1. Turmeric powder (1/4tsp)
2. black pepper powder (2/3tsp)
3. cumin powder (1tbsp)
4. salt (to taste)
Method of preparation:-
1. Take a bowl; mix all the ingredients of the marinade in it. Put the liver pieces in this mixture and keep to marinate for about half an hour.
2. Take a kadai, heat ghee in it. Fry onions in it until get golden brown. Add tomatoes and again fry them until they become pulpy. Now add the liver pieces. Put about ½ cup of water.
3. Avoid using excess water. Cover the pan with a lid and cook the mixture until it gets well cooked. Now the mutton liver fry gets ready and serve it.
