Andhra Mutton Curry Recipe
Ingredients
Mutton cubed (500gms), fennel seeds (1/2tsp), turmeric powder (1/4tsp), cinnamon (1inch stick), black peppercorns (4), cumin seeds(1tsp), coriander seeds (1tsp), poppy seeds (1tsp), cloves (2), oil (4tbsp), green cardamom (2), black pepper powder (2tsp), chopped fresh coriander leaves (2tbsp), chopped tomato (1large), chopped onion (3med.), curry leaves (10), ginger- garlic paste (1tsp) and salt (to taste).
Method of preparation:-
tTake mutton pieces, clean and wash them and cook them in pressure cooker with two cups of water, salt and turmeric powder. Cook it for 6 whistles and then open the lid. Drain and reserve the liquor take a pan, dry roast the poppy seeds, black peppercorns, fennel seeds, cinnamon, cumin seeds, cloves and green cardamom in the pan. Keep them to cool and then make powder of this mixture by grinding it. Take a kadai, heat oil in it. Add curry leaves and onions and sauté them until the onions get brown. Add ginger- garlic paste, red chili powder and half of the black pepper powder and then sauté them for a minute. Now add tomato and mutton pieces, cook them on high heat until the tomato gets soft. Add spice powder and salt and keep it to simmer for five minutes. Add the reserved cooking liquor and one cup of water and keep it to boil. Keep it to simmer on low heat until all the mutton pieces get well cooked with thick gravy. Add the remaining black pepper powder and mix it well. Now garnish it with coriander leaves and serve it hot.

Achari Mutton Recipe

Ingredients
Mutton, ½ inch pieces on the bone (800gms), mustard seeds (1tsp), onion seeds or kalonji (1tsp), mustard oil (7tsp), fennel seeds (1tsp), whole dry red chilies (8), cumin seeds (1/2tsp), chopped onion (4med.), chopped garlic (15-20cloves), chopped ginger (2” piece), chopped tomato (4med.), red chili powder (1tsp), chopped fresh coriander leaves (2 tbsp), turmeric powder (1tsp) and salt (to taste).
Method of preparation:-
Take a pan, dry roast mustard seeds, red chillies, cumin seeds, fennel seeds, fenugreek seeds, onion seeds and cloves separately. Keep them to cool slightly and then grind them coarsely. Take a thick bottomed pan, heat the mustard oil in it to a smoking point, keep it to cool and then heat it. Add onions and sauté them until get brown. Add ginger and garlic and then sauté them. Add the coarsely ground masala and cook it for a minute by stirring it all the time. Now add mutton and cook it on high heat until the mutton pieces get well browned. Add tomatoes, red chili powder, turmeric powder and salt and then mix them well. Cook it until the oil gets separate. Add two and a half cup of water and keep it to boil and the cover it. Reduce the heat to medium and cook it until the mutton gets well cooked. Adjust the seasoning and garnish it with coriander leaves. Serve it hot.

Mutton Pullao Recipe
Ingredients
For Rice:-Uncooked rice (250 gms or 1 1/4c), turmeric powder (1tsp), oil (1tbsp), chili powder (1tsp), coriander leaves and salt (to taste).
For Mutton:-Mutton pieces (1lb), finely chopped onions (2), ginger paste (1tsp), garlic paste (1tsp), finely chopped tomato (1large), turmeric powder (1tsp), chili powder (1tsp), coriander leaves, oil (2tbsp) and salt (to taste).
Method of preparation:-
Take a pressure cooker, heat the oil in it and fry chopped onions and add tomatoes, ginger and garlic and then fry them for about 5 minutes. Now add mutton pieces, turmeric and chili powder, salt with half cup of lukewarm water, cover the cooker tightly and cook on high heat for about 10 minutes. Remove the lid or cover of the cooker after half an hour and then mix the rice, turmeric powder, chili powder and salt with 2 cups of lukewarm water. Cover the cooker tightly with lid and again cook on high heat for about 15 minutes. When the mutton pullao gets ready then garnish it with coriander leaves serve it hot with coriander leaves.?

Shahi Korma Recipe
Ingredients
Mutton (1 1/2lb), garlic (4cloves), onions (3med.), cream (3/4c), oil (1/2c), garam masala (1/2tsp), coriander seeds (1tsp), red pepper (1tsp optional), almonds (1oz), saffron (a pinch), yogurt (3/4c) and salt (2tsp).
Method of preparation:-
Take mutton, clean it, wash it and then dry it. Blend the onion, garlic, almonds and coriander seeds in a blender. Put the blended mixture in a bowl and then marinade the mutton in this mixture for about 2 hours. Take a pan, heat the oil in it and fry the thinly sliced onions in it. Keep the fried onions aside. Add the marinade mutton in the pan and fry it until the liquid gets dry up. Add 3/4cup of warm water, cover and simmer until the meat is almost cooked. Then add salt and pepper. Now remove the cover and cook it until the liquid gets dry. Add beaten yogurt and fry until it leaves oil. Add the fried ground onions. Beat the cream and add soaked saffron and then mix it with the cooked mutton. Now add garam masala and baked it for ½ an hour at 250 degrees F. Garnish it with chopped coriander leaves and serves it in a serving dish with chapatti or rice.
