Sheera or Semolina Pudding Recipe
Ingredients
Semolina or cream of wheat (1c), ghee or clarified butter (1/2c), water (3c), sugar (1/4c), cardamom powder, chopped nuts and raisins (1/2tsp).
Method of preparation:-
Take a pan, heat ghee in it on medium heat until it gets hot. Add semolina. Stir it well and fry it on low heat for about 7 minutes or until the semolina gets lightly roasted. Keep it aside. Take a vessel, mix sugar, cardamom and water in it. Keep it to boil. Reduce the heat to low and cook it uncovered for about 2 minutes by stirring it periodically. Now add the water mixture. Stir it well and keep it to boil and reduce the heat to low and cook it on low heat by stirring it after every minute until the mixture gets dry. Sprinkle the chopped nuts and raisins. Serve it with dollop of ice-cream.

Tasty Bread Pudding Recipe
Ingredients
Bread slices cut into cubes (6), butter (4tbsp), heavy whipping cream (1c), raisins (1/4c), cashew nuts, broken into pieces (20), cinnamon powder (a pinch), vanilla essence (1tsp), beaten eggs (3), sugar (1/2c).
Method of preparation:-
First heat the oven to 350 degrees. Take a large bowl, cream together butter and sugar. Add eggs, cinnamon, vanilla, raisins, cream, cashew nuts and mix them properly. Now pour the mixture into the square pan. Mix the bread cubes into the liquid and keep them to soak the liquid for about 5 minutes. Set a pan in a larger pan filled with water to ½ inch from the top. Then cover it with aluminum foil. Place it in the oven and bake it for 40 minutes then remove the cover from the pan and again bake it for 10 minutes to brown the top. Now the bread pudding gets ready. This tastes better when it is warm. If it gets cold, slightly warm it in the microwave and then serve it.

Egg Pudding Recipe
Ingredients
Eggs (5), sugar (1/4c), butter (1/4c), vanilla (1tsp), milk (1/2l), all purpose flour (1/2c)
For hard sauce: Butter (1/3c), nutmeg powder, powdered sugar (1c), vanilla (1/2tsp).
Method of preparation:-
Take a small pan, heat it and then put butter in it. When the butter melts then add flour and sugar in it. Add milk to it and stir it. Cook the butter and milk mixture for about 5 minutes and then take off the pan from heat. Take a large bowl, beat eggs in this bowl. Add the beaten eggs in the butter milk mixture and keep on stirring. Now add vanilla to this mixture. Take a pudding dish, put the mixture in the dish. Heat the oven at 350 degrees F. Keep the pudding dish in a pan of water in the oven. Bake the pudding for about 40 minutes. When the pudding gets ready then serve it with hard sauce.
How to make hard sauce.
Take a bowl, beat butter in it until it gets fluffy. Add sugar in the butter while beating it. Add vanilla and keep on beating it. Now pour the sauce over the egg pudding and sprinkle a bit of nutmeg powder.

Fruit Pudding Recipe
Ingredients
Mixed fruits (apple, pineapple, ripe mango, banana etc), vanilla essence (1/2tsp), sugar (2c)ripe tomatoes (2).
Method of preparation:-
Take 2 ripe tomatoes; blend them in a mixer into a smooth paste by adding a cup of water. Take a pan, pour this juice in the pan. Take all fruits, peel the skin from them and then cut them into small pieces. Add the cut pieces of fruits and sugar in the pan to the tomato juice and keep it to boil. Keep stirring it occasionally. When the fruits get cooked and the raw smell of tomatoes disappears then adds the vanilla essence. When the bubbles appear and the pudding gets thick in then take off the pan from the heat. Take a kadai, heat ghee in it and add small pieces of cashew nuts. When the cashew nuts turn brown in color then add pour them into the pudding and mix them. Keep it to cool and then place it in the refrigerator until it is served.

Seviyan or Fine Noodle Pudding Recipe
Ingredients
Vermicilli (1/4c), milk (4c), ghee (2 1/2tbsp), cardamom powder (2tsp), sugar (3 1/2tbsp), blanched pistachios (1tbsp), blanched almonds (1tbsp), sunflower seeds (1tbsp), raisins (1tbsp), dry dates (6).
Method of preparation:-
Take dates; soak them overnight in a bowl. Deseeded and chop them into 4 pieces. Take a pan, heat ghee in it and then sauté the raisins, almonds, cashew nuts, chironji seeds and pistachios for about 2-3 minutes. Drain and then mix it with the chopped dry dates. Keep it aside. Now fry the vermicelli in the same ghee on low heat for about 2 minutes. Stir it continuously while frying. Take off the pan from heat and keep it aside. Take a deep bottomed pan, boil milk in it and then add vermicelli and sugar. Stir it until the sugar gets dissolves. Cook it uncovered on low heat for about 10 minutes by stirring it often. Now add the fried dry fruits and cardamom powder. Cover it and cook it for about 3 minutes. When it gets ready then serve it hot or cold in serving bowls.

Banana Wafers Recipe
Ingredients
Nendra bananas (4med.), salt (to taste), oil (to deep fry).
Method of preparation:-
Take raw bananas, peel them.Take a kadai, heat coconut oil in it. Take a slicer and hold it over the kadai. Slice the banana thin directly into the kadai and deep fry the slices in the hot oil. Take a bowl, mix salt in some water in the bowl. Sprinkle this salted water over the oil and wait until the water gets evaporates. Now drain the banana wafers from the oil and place them on the paper towel to absorb the excess oil from the fried wafers. Now place the wafers in another plate to serve or keep them to cool and then store in the air tight container.

Double Ka Meetha (Bread Pudding) Recipe
Ingredients
Loaf bread (1small), powdered cardamom (5), milk (1lt), saffron (10gm), sugar (500gms), soaked and finely chopped almonds (100gms), double cream (250gms), chopped and roasted cahew nuts (100gms), clearfied butter (250gms).
Method of preparation:-
Take bread slices and cut each bread slices into four pieces.Fry them in the ghee or clarified butter until turns golden brown. Make the sugar syrup by boiling water with sugar for about 15 minutes. Add the saffron and the powdered cardamom dissolved in the milk to the sugar syrup. Boil the milk until it gets thickened. Take a flat tray, place the fried pieces of bread on it and then sprinkle the chopped nuts on them. Pour the sugar syrup, double cream and milk one by one over the bread pieces while they are hot. Cool it and then place it in the refrigerator. Serve the bread pudding as a dessert.
