Masala Puri Recipe
Ingredients
Wheat flour (1c), ajwain (1/4tsp), red chili powder (1/2tsp), asafoetida (a pinch), oil (for frying), salt (to taste).
Method of preparation:-
Take wheat flour, sieve it in a bowl and then add salt in it. Add all ingredients of masala in the bowl and mix them. Add enough water in it to make dough. Knead the dough to make soft. Cover the bowl and keep it aside for about half an hour. Make small balls of dough and then roll them on flat surface to make puris. Take a kadai, heat oil in it and then deep fry the puris in it. When the puris turn lightly brown in color then drain them and serve them hot with any type of curry.

Farsi Puri Recipe
Ingredients
Crushed ajwain (1 tea spoon), crushed black pepper (1 tea spoon), wheat flour (250 gms), oil, whole jeera (1 tea spoon), salt to taste.
Method of preparation:-
Take a bowl, add some wheat flour in it. Then a add oil, crushed black pepper, whole jeera, salt and ajwain and a little water. Mix all ingredients with your hands to make dough. Knead the dough to make it soft. Keep it for half an hour. Then make small balls of dough and then roll them on flat surface to make the puris. Take a frying pan, heat oil in it and then deep fry the puris in it. When they get fried then take them out in a dish. Keep them to cool and then store them in a container. Enjoy these Farsi puris with tea.

Sookhi Roti Ki Subzi Recipe
Ingredients
Sookhi Roti (6 pieces), green coriander (50gms), red chilli powder (5gms), cumin seeds (2gms), turmeric (a pinch), mustard seeds (2gms), coriander powder (5gms), amchur powder (20 gms), chopped tomatoes (1c), oil (50ml), asafoetida (a pinch) and salt (to taste).
Method of preparation:-
Take a bowl, put water in it and then mix the masalas like chilli powder, turmeric, amchur powder and coriander powder in the water. Take a kadai, place it over heat. Heat oil in it and add cumin seeds, mustard seeds and asafoetida in it. Then add water with masalas in it and keep it to boil. Take sookhi roti and then crushed it into small pieces. Add the crushed pieces in the kadai and cook until gets soft. Then add chopped tomatoes. Sprinkle the chopped green coriander on the top and serve it hot.

Bajra Roti Recipe
Ingredients
Millet flour (5c), ghee (6 to 7 tbsp) and warm water and salt (a pinch).
Method of preparation:-
Take millet flour, sieve it in a bowl and add a pinch of salt in it. Take some warm water and add it in flour. Mix the flour to make dough and then knead the dough for about 5 minutes to make it soft. Make small balls of this dough, press each ball with your palm to make it flatten and then roll it to make roti. Take a griddle, place it over high heat. Put the roti on the griddle and then cook it from both sides. Then place it on direct flame to make it crispy. Now apply the ghee on it and make more rotis in the same way. Serve hot rotis with chutney of garlic or curd.

Chana Dal Paratha Recipe
Ingredients
Maida (500gms), chana dal (250 gms), oil (200gms), garam masala (1/2tsp), salt (to taste), red chili powder (to taste), dhaniya powder (1/2tsp).
Method of preparation:-
Take channa dal, soak it in a bowl for about 6 hours. Take a bowl, add maida, oil of 2 tablespoon and salt in it. Mix it and then add little water to make dough. Knead the dough to make it soft. Take pressure cooker, add 1 glass of water and then boil soaked channa dal for one whistle in it. Now take off the cooker from the heat and drain the water and then grind the cooked dal. Take a kadai, heat 2 tablespoon of oil in it and roast the dal paste in it for about 3 to 4 minutes. Mix all the masala in it and then take off the kadai from the heat and keep it to cool. When it gets cool then stuff this mixture into the balls of dough. Roll these stuffed balls of dough to make thin parathas. Cook the parathas on hot tawa and then serve them with chutney and raita.

Bedmi Puri Recipe
Ingredients
Moong dal (100gms), maida (500gms), garam masala (1tsp), red chili powder (1tsp), oil (4tbsp), salt (to taste), ground coriander (1tsp).
Method of preparation:-
Take a bowl, mix moong dal, ground coriander, red chili powder and garam masala in it. Grind this mixture in a mixer to make paste. Take maida in a bowl; add paste and oil in it. Now make dough by adding some water in it. Knead the dough to make it soft. Then take some dough in the palm of your hand and make small ball of it. In this way make small balls of dough. Then roll the balls on the flat surface to make purees. Take a frying pan or kadai, heat oil in it for frying. Deep fry the puris in the hot oil and then drain them. Now the bedmi puris get ready to serve.

Plain Paratha Recipe
Ingredients
Whole wheat flour (1c), water (1/2c) and ghee for shallow fry.
Method of preparation:-
First to make dough, mix flour and water in a bowl. Make the dough and then knead it until it gets smooth and elastic. Keep it for 30 minutes. After 30 minutes divide the dough into 6 parts and make small balls. Flatten and roll each ball. Spread ghee over them and then fold the sides in the centre. Again roll it. Heat the tawa and then put the paratha on it to cook. After sometime turn the side and cook the other side. Spread the ghee on the other side. Fry until the bottom is crisp and golden. Then turn and fry the other side. Make more parathas in the same way. Serve the parathas at once as the parathas lose its crispness if stored.

Chapati (Phulka) Recipe
Ingredients
Whole wheat flour (1c), water (1/2c).
Method of preparation:-
Take a large bowl, put 1 cup of flour with half cup of water in it. Blend them together until it gets hold. Beat and knead the flour well until it makes a compact ball. Knead the dough until it gets smooth and elastic. Keep it aside for about 30 minutes. After 30 minutes knead and then divide the dough into 4 to 6 parts or small balls. Roll each ball into flat round about 1/8” thick. Heat the tawa and put the phulka on it and keep it to cook for about 1 minute. When the small bubbles starts to appear then turn its side and then cook the other side until the small bubbles appear. Then again cook the first side and press it lightly with a clean towel or napkin. It should be puffed. Apply the butter on it and serve it hot with vegetable.

Egg Paratha Recipe
Ingredients
Wheat flour (2c), eggs (4), chopped tomato (1), chopped onions (2), clarified butter or ghee, cooking oil (2tbsp), red chili powder (1tsp), chopped fresh coriander, chopped capsicum (1).
Method of preparation:-
Take a frying pan, heat oil in it. Add the chopped onions and fry them on medium heat until they become golden brown. Add the capsicum and tomato and fry it for few minutes. Now add eggs, red chili and salt and then mix it properly. Cook this mixture until the eggs get cooked. Put the chopped coriander leaves in the mixture. Take off the pan from heat and keep it to cool. Take a bowl, mix flour and water in it and make the dough of it. Knead the dough to make it soft. Add 2 tablespoon of clarified butter in it and again knead it for sometime. Make the small balls of this dough. Roll the balls of dough to give them the shape of roti. Take one roti and put the egg mixture on it and then cover it with another roti. Again roil a little and place it on hot griddle. Fry it from both sides properly in butter. Now egg paratha is ready to serve.

Halwa Puri Recipe
Ingredients
Sooji (1c), sugar (1c), wheat flour (1c), water (1c), oil (for deep frying)and water to make the dough.
Method of preparation:-
Take a bowl, mix wheat flour and water in it to make the dough of this mixture. Mix a little bit of oil in the dough and then knead it to make soft dough. Keep it aside for ½ an hour. Take a pan, boil 1 cup of water with 1 cup of sugar and keep it to boil. Now add soji by continuously stirring and keep the halwa to cook for about 5 minutes. Take off the pan from heat and keep it aside to cool. Now make small lumps of halwa out of this and then keep it aside. Take the dough and make the small lumps and then press with the palms into thin small puri. Stuff the halwa into the puri and then cover the halwa with dough. Press this into a puri with the palm on the foil or thick plastic paper. Now deep fry it in hot oil until it turns golden in color and gets crispy.
