Crispy Noodle Salad Recipe

Ingredients
1. Chinese beans sprouts (1/2c)
2. fried noodles, roughly broken (4c)
3. chopped celery stalk (1/4c)
4. thinly sliced red capsicum (1/2c)
5. thinly sliced green capsicum (1/2c)
6. spring onion (3/4c)

For Dressing:-
1. Orange juice (4tbsp)
2. honey (1tbsp)
3. vinegar (1tbsp)
4. dark soya sauce (2tsp)
5. tomato ketchup (2tbsp)
6. oil (1tbsp)
7. salt (to taste)
8. pepper (to taste)

Method of preparation:-
1. Take a large bowl, add celery stalks, red capsicum, green capsicum, spring onion and beans sprouts in it and then mix all these ingredients properly.

2. Take a serving plate, put the mixture of bowl in it. Then sprinkle the fried noodles on the top.

3. Take a bowl, mix all the ingredients of dressing in it and mix them well. Now pour this dressing mixture over the salad in the serving plate. Serve it immediately.

Asparagus Salad Recipe

Ingredients
1. Trimmed and peeled asparagus (900gms)
2. eggs, hard cooked (2)
3. olive oil (4tbsp)
4. white wine vinegar (3tbsp)
5. salt (1/2tsp)
6. freshly ground pepper (to taste)

Method of preparation:-
1. Take a large pot, add salted water in it and then steam the asparagus in it until the asparagus get tender. Now take out the asparagus from the pot and then wash it under the tap running water.

2. Pat dry the asparagus and then cut it into very small pieces of about ½ inch. Take hard boiled eggs, separate the egg whites and yolks and then chop them.

3. Take a bowl, mix oil, pepper, salt and vinegar in it. Add asparagus and then mix it. Now add the chopped egg yolks and whites in the bowl and mix them properly.

Chicken Caesar Salad Recipe

Ingredients
1. Chicken breast halves, skinless, boneless (4)
2. head lettuce torn into pieces (1/2)
3. cheese and garlic croutons (1c)
4. sliced sweet onion (1/2)
5. grated parmesan cheese (2tbsp)
6. green bell pepper, seeded and thinly sliced (1)
7. mesquite-lime marinade (1/2c)
8. tomato cut into wedges (1large)
9. creamy Caesar style salad dressing (1/2c)
10. salt (to taste)

Method of preparation:-
1. Take a baking pan, place the chicken in it and then pour the marinade all over the chicken. Cover the pan and keep it in the refrigerator to marinate for about ½ an hour.

2. Now heat the gas grill or the charcoal to the medium high heat. Place the chicken breast on the hot grill and then grill it from both sides for about 15 minutes or until it gets cooked and turn pink in color.

3. Now take off the chicken from the heat and keep it to cool and then cut it into strips. Take a large bowl, mix chicken, lettuce, tomato, green bell pepper, onion, parmesan cheese, salt, croutons and dressing in it. Mix all these to coat properly.

Moong Salad Recipe

Ingredients
1. Moong dal (1/2c)
2. tomato (1)
3. pineapple chunks (1/2c)
4. ginger (1”)
5. beet root (1)
6. green peas (1/4c)
7. tomato (1)
8. carrot (1)
9. cucumber (1)
10. potato (1large)
11. few fresh coriander leaves
12. few fresh mint leaves

Method of preparation:-
1. Take moong dal, wash it and then soak it in water for about 1 hour. Then boil the soaked dal, until it gets soft and cooked. Boil the potatoes. Chop all the vegetables and then mix them in a bowl.

2. Take a large salad bowl, add cooked moong dal, boiled potatoes, and chopped mixed vegetables in it and then mix them. Decorate it with minced ginger, coriander and mint leaves.

3. Now keep the salad bowl in the refrigerator for an hour to chill. When the salad gets chilled then serve it. The salad is good in taste.

Colorful Rice Salad Recipe

Ingredients
1. Cooked rice (2c)
2. mayonnaise (1/4c)
3. pimiento-stuffed olives, sliced (3/4c)
4. cooked and drained frozen peas (1package)
5. chopped parsley (1/2c)
6. cooked ham, diced (1c)
7. eggs, hard-boiled and chopped (4)
8. diced pimiento (1jar)
9. chopped green onions (6)
10. lettuce leaves, optional
11. cherry tomatoes, optional
12. shredded cheddar cheese (2c)
13. sweet pickle relish (1/3c)

Method of preparation:-
1. Take a large bowl, add cheese, chopped onions, cooked rice, olives, relish, parsley, ham, pimiento, eggs and peas in it. Mix all these ingredients properly.

2. Now add the salad dressing or mayonnaise in it and mix it gently. Keep the bowl in the refrigerator to chill. When the salad gets chilled then take out the bowl from the refrigerator and then serve the salad on the lettuce leaves. Decorate the salad with cherry tomatoes before serving.

Avocado Salad Recipe

Ingredients
1. Avocado, peeled, pitted and sliced (1)
2. torn salad greens (2c)
3. chopped pecans (1/2c)
4. lemon juice (1tsp)
5. olive oil (2tbsp)
6. cider vinegar (1tbsp)
7. honey (4tsp)
8. white sugar (2tbsp)
9. sliced strawberries (10)

Method of preparation:-
1. Take a small bowl, mix honey, vinegar, sugar, lemon juice and olive oil in it. Mix them properly and keep the bowl aside.

2. Take a salad bowl, put the salad greens in it and then place the strawberries and sliced avocado on the top. Sprinkle the dressing and then the pecans over the avocado.

3. Keep the salad bowl in the refrigerator to chill for about 2 hours. When the salad gets chilled then serve it.

Sweet Lime Orange Veggie Salad Recipe

Ingredients
1. Paneer, sliced into fingers (200gms)
2. yellow capsicum (1small)
3. red capsicum (1small)
4. peanuts roasted crushed (1tbsp)
5. sweet lime, segments peeled (1)
6. lightly roasted sesame seeds (1tsp)
7. orange segments peeled, deseeded (2)
8. coarsely shredded lettuce leaves (2)

For Dressing:-
1. Finely crushed very small green chili (1)
2. finely chopped mint leaves (5 to 6)
3. finely chopped basil leaves (5 to 6)
4. very finely chopped lemon grass (1stalk)
5. crushed garlic (1tiny flake)
6. pepper (to taste)
7. salt (to taste)
8. grated lemon rind (1/2tsp)
9. lemon juice (1tsp)

Method of preparation:-
1. Take capsicum and cut it into thin slices. Take a large bowl, put all the vegetables and fruits in it. Keep the bowl in the refrigerator and chill it for half an hour.

2. Take a bowl, add all the ingredients of dressing in it and mix them properly. Now put the dressing mixture in the salad bowl. Add nuts and seeds to fruit. Again spread the dressing over it. Mix it gently and then serve it when the salad gets chilled.

Creamy Potato Salad Recipe

Ingredients
1. Chopped green onions (1/4c)
2. nonfat mayonnaise (1/2c)
3. salt (1/2tsp)
4. diced pimiento
5. drained (2 ounces)
6. low fat sour cream (1/4c)
7. white wine vinegar (1tbsp)
8. prepared mustard (2tbsp)
9. round red potatoes (6)
10. garlic powder (1/8tsp)

Method of preparation:-
1. Take a sauce pan, put water in it and then add the cut red potatoes in pan and keep them to boil for about 15 to 20 minutes until they get soft. Drain them and keep them to cool.

2. Take a large bowl; add chopped green onions, pimiento and potato in it. Mix them properly. Then add mayonnaise in it and mix it well. Now add the potato mixture in it. Cover the bowl, keep it in the refrigerator to chill and then serve it.

Channa Noodle Salad Recipe

Ingredients
1. Kabuli channa, soaked overnight (1c)
2. any oil (1tbsp)
3. olive or salad oil (1tsp)
4. black salt (to taste)
5. ground sugar (1tsp)
6. finely chopped green chili (1)
7. vinegar (1tbsp)
8. finely chopped coriander (1tbsp)
9. yellow or red sweet bell pepper (1)
10. finely chopped capsicum (1)
11. finely chopped onion (1large)
12. Maggie or other noodles (1c)
13. salt (to taste)

Method of preparation:-
1. Mix olive oil and vinegar to make the dressing. Add sugar, black salt, and chilies, mix them properly. Take bell pepper and cut it into strips.

2. Cook the channas in pressure cooker. When the channas get cooked then drain them and keep them aside to cool.

3. Take a pan, boil water in it and add salt in it. Crush the noodles and put in boiling water and then add 1 tablespoon of oil in it. Cook the noodles until they get soft.

4. To drain the water put the noodles in colander. Keep them to cool in large plate. When the channas and noodles get cold then mix all ingredients in it. Add dressing in it and keep it in the refrigerator to chill. Decorate the salad with coriander and bell pepper.

Ingredients
1. Seashell pasta (1pound)
2. dried parsley (1tbsp)
3. grated parmesan cheese (1tbsp)
4. dried oregano (2tbsp)
5. balsamic vinegar (1/4c)
6. Dry Italian style salad dressing mix (1package)
7. chopped green bell pepper (1)
8. chopped tomatoes (3)
9. diced red bell pepper (1)
10. drained and chopped black olives (1can)
11. chopped genoa salami (1/4pound)
12. diced asiago cheese (1/2pound)
13. chopped pepperoni sausage (1/4pound)
14. salt and ground black pepper (to taste)
15. extra virgin olive oil (3/4c)

Method of preparation:-
1. Take pasta, cook it in salted boiling water in a large pot until it gets soft. Drain it and then cool it under running water.

2. Take a large bowl, add asiago cheese, red bell pepper, pepperoni, black olives, tomatoes, green bell pepper, salami and pasta in it and mix it properly. Add dressing mix in it and then mix it. Cover the bowl and then place it in refrigerator.

3. Take a bowl, mix parmesan cheese, parsley, oregano, olive oil, salt and pepper and vinegar in it. Mix all these ingredients properly to prepare the dressing. Now pour the dressing over the salad, Mix it and then the salad is ready to serve . Serve it.
