Makki Paneer Pakora Recipe

Ingredients
1. Bengal gram flour or besan (6tbsp)
2. corn fresh or makki (200gms)
3. milk (1c)
4. oil (for deep frying)
5. chopped green chili (2)
6. chopped garlic (2tsp)
7. chopped ginger (2tsp)
8. chopped coriander leaves (2tbsp)
9. cumin powder (1/2tsp)
10. cottage cheese or paneer (100gms)
11. dry mango powder or amchur (1 3/4tsp)
12. chopped onion (1)
13. salt (to taste)

Method of preparation:-
1. Take a blender, crush the corn in it. Take a pan, heat oil in it and fry chopped garlic and ginger in it until they turn pink in color. Then fry crushed corn in it. Mix salt in it. Add milk in it and cook it until gets the mixture gets thick.

2. When the corn gets cooked then put it in the dish and keeps it to cool. Add cumin powder, chopped onion, coriander leaves, green chillies and amchur powder in it. Mix them properly. Add besan in it for binding. Add little milk in the mixture if it becomes too thick. Make small balls of this mixture.

3. Take a kadai, place it over medium heat and heat oil in it for frying. Now deep fry the balls of mixture or pakoras in hot oil until they turn golden brown. Drain them and place them on paper towel to soak excess oil. Serve them hot.

Pakoras (Savory Fritters) Recipe

Ingredients

For batter:-
1. Besan (1/2c)
2. salt (1/2tsp)
3. red pepper (1/4tsp)
4. garam masala (1/2tsp)
5. warm water (5oz)
6. paprika (optional)

For vegetables:-
1. Potato (1)
2. onion (1small)
3. a few spinach leaves
4. oil for deep frying

Method of preparation:-
1. Take a bowl. Put besan and half of warm water in the bowl. Mix it until it makes a thick batter. Beat it for about 5 minutes and then add the rest of the water. Keep the batter to swell up for about 30 minutes. Add salt, pepper, paprika and garam masala and again beat it.

2. Take onion and potato. Wash, peel and then slice them. Wash the spinach leaves and pat dry them.

3. Take a kadai, heat oil in it until it gets smoking hot. Dip the cut vegetables in the batter of besan and then deep fry them in the hot oil until get golden brown. Drain the pakoras from the oil and serve them hot with the sauce or chutney.

Egg Manchurian Recipe

Ingredients
1. Hard boiled eggs (6)
2. green chilies (6)
3. corn flour (1tbsp)
4. sugar (1/4tbsp)
5. soya sauce (2tbsp)
6. oil (for frying)
7. salt (to taste)
8. vinegar (1tbsp)
9. onions (3)

Method of preparation:-
1. Take onions and slice them lengthwise into nice thick pieces. Slit the green chilies into half and keep it aside.

2. Take a small bowl, add corn flour in it and then add little water. Make the smooth paste of this.

3. Now take a frying pan, heat 3 tablespoon of oil in it. When the oil gets hot then add onions and saute them until get golden brown. Now add the corn flour paste, soya sauce, sugar and vinegar, salt to taste and then mix it well.

4. Saute them until the aroma begins to rise. Cut the boiled eggs into halves lengthwise and then add it to the paste. Add the green chilies and keep it to boil. Reduce the heat to low and keep it to simmer and then cook it for 2 minutes. Take off the pan from heat and then serve it.

Egg Pakora Recipe

Ingredients
1. Gram flour or besan (3tbsp)
2. hard boiled eggs (4)
3. red chili powder (to taste)
4. little black pepper powder
5. oil (to fry)
6. salt (to taste)

Method of preparation:-
1. Take hard boiled eggs, peel them and cut them into two halves. Sprinkle the little salt and pepper on eggs.

2. Take a bowl; add gram flour, salt, chili powder in it. Add little water and then make the batter of this mixture.

3. Take a kadai, heat oil in it. Take egg piece, dip it in batter and then deep fry it in hot oil on medium heat until get golden brown. Then drain the egg pakora on the paper towel and serve them hot with ketcup.

Chicken Tikka Sandwich Recipe

Ingredients
1. Chopped chicken tikka (8)
2. chopped onion (1med.)
3. chopped green capsicum (1small)
4. white bread (8 slices)
5. mayonnaise (2tbsp)
6. fresh coriander leaves (2tbsp)
7. green chutney (as required)
8. butter (as required)
9. chaat masala (1/2tsp)

Method of preparation:-
1. Take chicken tikka, mash it in a masher. Add onion, coriander leaves, capsicum, green chutney and chaat masala and then mix it well. Add mayonnaise and mix it well.

2. Take the bread slices, apply butter on one side of the bread slice. Spread the filling on the four slices and then cover with another slice each. Apply butter on the outer slice of the sandwich and then place them one by one in the preheated grill.

3. Grill them until they get golden brown. Now cut them into triangle and then serve them immediately. You can also serve the sandwiches without grilling them, Trim the edges, cut into triangles and then serve them.

Baked Namakpara Recipe

Ingredients
1. Whole wheat flour or atta (1/2c)
2. baking powder (1/2tsp)
3. ajwain (1/2tsp)
4. ghee (1/2c)
5. maida (1/2c)
6. salt (to taste)

Method of preparation:-
1. Take a bowl, mix whole wheat flour and maida with baking powder in the bowl. Add ghee and then rub it with the fingertips to the the crumby consistency.

2. Add the ajwain seeds and salt. Add a little water to make a stiff dough. Cover the dough and keep it for sometime. Preheat the oven to 200 degrees c.

3. Sprinkle some refined flour on the flat surface and then roll out the dough on it about ½ cm thick round. Take a baking tray, grease it with a little oil and sprinkle the refined flour on it. Now cut the rolled dough into diamond shaped pieces.

4. Place them on the baking tray and then bake in the preheated oven for 15 to 20 minutes. When the namakparas get baked then take out the tray from the oven. Keep the namakparas to cool and then store in the airtight container.

Andewale Pakode Recipe

Ingredients
1. Peeled and grated boiled eggs (8)
2. chopped green onions with spring (3)
3. chopped ginger (2” piece)
4. chopped green chillies (4-5)
5. gram flour (3tbsp)
6. oil (for deep frying)
7. soda bicarbonate (1/4tsp)
8. chopped fresh coriander leaves (3tbsp)
9. red chilli powder (1/2tsp)
10. cumin powder (1/2tsp)
11. chaat masala (1tsp)
12. salt (to taste)

Method of preparation:-
1. Take a bowl, mix grated eggs, gram flour, chopped ginger, spring onions with greens, green chillies, cumin powder, red chilli pwder, chaat masala, coriander leaves, soda bicarbonate and salt in the bowl. Mix all the ingredients with a little water.

2. Take a kadai, heat oil in it for frying. Dip two tablespoons in the oil, fill one tablespoon with the egg mixture and shape it like an egg with other spoon and then gently slide it into the hot oil. Fry the pakoras in the hot oil until gets golden brown.

3. Turn the pakoras occasionally while frying. Drain them from the oil and place on the paper towel. Serve them hot with green chutney or tomato ketchup.

Stuffed Toast Recipe

Ingredients

For paneer potato and corn toast:-
1. Boiled potato (1)
2. coriander (2tbsp)
3. chopped green chillies (4)
4. paneer (225gms)
5. bread slices (a few)
6. cooked corns (2c)
7. butter (a little)
8. grated cooking cheese (6tbsp)
9. oil (2tbsp)
10. salt (to taste)

For the white sauce:-
1. Milk (1 1/2c)
2. plain flour (1 1/2tbsp)
3. butter (1 1/2tbsp)
4. salt and pepper (to taste)

To be ground into paste:-
1. Onion (1)
2. ginger (1”)
3. green chillies (4)

Method of preparation:-
1. For white sauce:- Take a pan, place it over heat. Melt the butter in it and put the flour and cook it for about 3 minutes without browning it and keep on stirring it throughout.

2. Take off the pan from heat and add the milk, mix it until it gets blended. Again place the pan on heat and cook it slowly, stirring it throughout until the sauce gets thicken. Put salt and pepper and then mix it properly.

3. For paneer potato and corn toast:- Take roll and divide it horizontly, Scoop out the centre and keep it aside. Brush it with the melted butter and then sprinkle a little milk on both sides. Bake it in hot oven for 5 minutes at 450 degrees F.

4. Take a pan, heat oil in it and cook the onions in the oil for 3 minutes. Put the paste and saute for 1 minute. Now saute the chopped tomato and curry powder for few minutes.

5. Put the cooked corns, coriander, green chilli, 1/4th of scooped part of bread and salt. Now spread the filling on each half of the roll, sprinkle the capsicum and tomato. Again bake it in the hot oven for 10 minutes at 450 degrees F. Now the stuffed toast is ready to serve.

Potato Chips Recipe

Ingredients
1. Potatoes (2)
2. Chilli powder (1tsp)
3. salt (to taste)
4. oil (for frying)

Method of preparation:-
1. Take potatoes, remove the skin from the potatoes with a peeler. Cut the chips briskly by using the chips- cutter. Soak the chips in warm water for about 10 to 15 minutes. Then shift to the colander. Allow the water to trickle down.

2. Take a piece of clean cloth, spread the chips on it and keep them to dry in the sun for 10 to 15 minutes.

3. Take a frying pan, heat oil in it. Put the chips briskly but carefully into the hot oil. Fry them until the chips turn yellow. Mix salt and chili powder. Then sprinkle it over fried chips.Keep them to cool and then put them in a airtight container.

Paani Puri Recipe

Ingredients
1. Gol gappa orn paani puri (250 gms)
2. steamed bean sprouts (100gms optional)
3. black chickpeas (125gms)
4. coriander leaves (1/2bunch)
5. mint leaves (1bunch)
6. boiled and mashed potatoes (125gms)
7. paani puri masala (6tbsp)
8. chilli powder (1/4tsp)
9. salt (to taste)
10. cold water (2liters)
11. mint chutney
12. tamarind chutney

Method of preparation:-
1. Make the paste of mint and coriander leaves in a grinder. Take 2 liters of cold water, mix the paani puri masala in the water. Then add mint and coriander paste and the ice cubes in the water.

2. Wash the black chickpeas and soak them for overnight. Next day boil them in a pan or in the cooker with water and salt. Boil them until they get soft. Drain the chickpeas and then keep them aside. Add salt and chilli powder to the mashed potatoes and then mix them in the chickpeas and bean sprouts.

3. Now take golgappa, make a hole on one side of it and then fill it with a teaspoon of potato mixture. Add mint and tamarind chutney on the top. Now dip each golgappa in the prepared water and eat it.
