Moong Soup With Paneer Recipe

Ingredients
1. Moong (3/4c)
2. mustard seeds (1tbsp)
3. finely chopped paneer (2tbsp)
4. cumin seeds (1tsp)
5. sugar (2pinches)
6. asafoetida (1/2tsp)
7. ghee (2tbsp)
8. lemon juice (1tsp)
9. pepper powder (1/2tsp)
10. salt (to taste)

Method of preparation:-
1. Soak the moong dal in water for few hours. Cook it in the pressure cooker with 6 cupps of water. Take a blender and then blend the cooked moong in it and strain it.

2. Take a pan, heat the ghee in it and fry the mustard seeds and the cumin seeds in it. When they starts crackle then add the asafoetida and cooked moong liquid in the pan.

3. Add the pepper, sugar, salt and the lemon juice in the pan. Keep it to boil for about 2 minutes. Now add the chopped paneer and again cook for about 2 minutes. When the soup of moong gets ready then serve it hot in the soup bowl.

Number of servings – 6 cups
Cooking time – 25 minutes

Indian Cream To Tomato Soup Recipe

Ingredients
1. Chopped ripe tomatoes (1 1/2lb)
2. peeled and chopped ginger (2”fresh)
3. milk (1pt)
4. chopped lemon grass (1tbsp)
5. water (4fl oz)
6. curry leaves (2)
7. salt (1tsp)
8. single cream (4fl oz)
9. ground roasted cumin seeds (1tsp)
10. ground black pepper (a pinch)
11. lime or lemon juice (2tsp)
12. cayenne pepper (a pinch)
13. chopped coriander leaves (1tbsp)

Method of preparation:-
1. Take a large sauce pan, place it over heat. Put the tomatoes, curry leaves, lemon grass, salt and water in the sauce pan and keep it to boil. Reduce the heat to low, cover the pan and simmer it for 15 minutes.

2. Remove the cover, increase the heat and cook it more rapidly for another 15 minutes. Now sieve the puree and you should have about 1/4pt thick tomato juice.

3. Add cream, cumin seeds, black and cayenne pepper, milk, lime or lemon juice. Stir it well and again heat the soup without boiling. Garnish the soup with finely chopped coriander. Serve it hot in the soup bowls.

Tomato Soup Recipe

Ingredients
1. Tomatoes (600gms)
2. green chilies (2)
3. chopped ginger (1tbsp)
4. oil (1tbsp)
5. chopped garlic (1tbsp)
6. sugar (1tbsp optional)
7. whole garam masala (1tbsp)
8. cumin seeds (1tsp)
9. bay leaves (2)
10. salt (to taste)
11. chopped green coriander (1tbsp)

Method of preparation:-
1. Take tomatoes, wash them and cut them into quarters. Take a large sauce pan, add tomatoes, sugar, chopped garlic and ginger, green chilies and garam masala in the pan and cook it.

2. Then add 5 cups of water and the bay leaves in the pan. Keep this mixture for boiling. When it starts boiling then reduce the heat to low and simmer it for about 20 minutes until the tomatoes get mashed completely. When the soup gets ready then strain it with a soup strainer in a large bowl.

3. Take a pan, place it over heat. Heat the oil in it then add cumin seeds and keep them to crackle then add the strained tomato liquid and add salt in it. Keep it for boiling and then add in the soup if it is sour. Garnish the soup with the chopped green coriander and then serve it hot in soup bowls.
