Groundnut Chikki Recipe

Ingredients
Groundnut or moongfali (1/4kg), ghee (2tbsp), brown sugar or shakkar (100gms), sugar (50gms).

Method of preparation:-
groundnut-chikkiTake groundnut, roast it in a pan over low heat and then take off the pan from heat. Keep it aside to cool and then take out its skin. Take a frying pan, mix sugar and brown sugar in it. Then add a little water and keep it to boil. When it gets thick in consistency then adds groundnuts in it. Mix it well. Take a thali, grease it and then spread the groundnut mixture in it. Keep it to cool slightly and then cut it into pieces with a knife. Now keep the groundnut chikki a side to cool to cool completely and then store in airtight container.

Sweet Potato and Banana Salad Recipe

Ingredients
Thickly sliced bananas (2), sweet potatoes (450gms), green bell pepper (10, red bell pepper (10, garlic clove 91), lemon juice 91tbsp0, butter (50gms), thick slices white bread, crust removed and sliced (2), salt and pepper.
For dressing:- Olive oil (2tbsp), lemon juice (2tbsp), chopped fresh chives (2tbsp), clear honey (2tbsp).

Method of preparation:-
sweet-potato-and-banana-saladTake a saucepan, boil water in it and then cook sweet potatoes in it for about 10 to 15 minutes until they get soft. Then drain them and keep them aside. Take a frying pan, melt butter in it. Add garlic, lemon juice and peppers in it and cook them for about 3 minutes by stirring. Then put the banana slices in the pan and cook them for 1 minute. Take out the banana slices from the pan and mix them to the sweet potatoes. Then cook the bread cubes in the frying pan for about 2 minutes until they get golden brown from all sides. Mix the dressing ingredients in a pan and heat them. Take serving dish, place the potato mixture on it and add salt and pepper according to taste. Now pour the dressing over the salad. Now the salad is ready. Serve it immediately.

Golpapadi Recipe

Ingredients
Whole wheat flour or gehun ka atta (1c), poppy seeds (1tsp), ghee (5tbsp), desiccated coconut (1tsp), cardamom powder (1/4tsp), jiggery (3/4c).

Method of preparation:-
golpapadiTake a thali of 6 inch diameter, grease it with oil and then sprinkle the poppy seeds on it. Take a frying pan, melt ghee in it and then add wheat flour in it. Cook the flour in it until it changes its color to golden brown by stirring it. Take off the pan from heat and then add coconut, cardamom and jiggery in it. Mix it well. When the jiggery gets mixed then spread this mixer into the thali of poppy seeds. When the mixer is still warm then cut it into diamond shapes. When it gets cool then store in a air tight jar.

Narkol Nadu Recipe

Ingredients
Coconut (1), condensed milk (1/4c), milk powder (3tbsp), milk solids, khoya or mawa (1/2c), sugar (1/2c), raisins (for decorate), green cardamom powder (1/4tsp).

Method of preparation:-
narkol-nadu-recipeTake coconut, take out its water. Grate it and then grind it. Take khoya and make very small balls of pea size pieces and keep them aside. Take a kadai, place it over high heat and then fry the ground coconut in it. Add condensed milk and sugar in it and mix it properly and keep it to cook. When the mixture gets dry then mix the milk powder and cardamom powder in it. Cook it and stir it constantly. When the mixture leaves the sides of the kadai then take off the kadai from heat and keep it to cool. Now divide the mixture in parts and add khoya ball in each part. Make the small balls and then garnish them with raisin.

Sweet Lime Orange Veggie Salad Recipe

Ingredients
Paneer, sliced into fingers (200gms), yellow capsicum (1small), red capsicum (1small), peanuts roasted crushed (1tbsp), sweet lime, segments peeled (1), lightly roasted sesame seeds (1tsp), orange segments peeled, deseeded (2), coarsely shredded lettuce leaves (2).
For Dressing:- Finely crushed very small green chili (1), finely chopped mint leaves (5 to 6), finely chopped basil leaves (5 to 6), very finely chopped lemon grass (1stalk), crushed garlic (1tiny flake), pepper (to taste), salt (to taste), grated lemon rind (1/2tsp), lemon juice (1tsp).

Method of preparation:-
sweet-lime-orange-veggie-saladTake capsicum and cut it into thin slices. Take a large bowl, put all the vegetables and fruits in it. Keep the bowl in the refrigerator and chill it for half an hour. Take a bowl, add all the ingredients of dressing in it and mix them properly. Now put the dressing mixture in the salad bowl. Add nuts and seeds to fruit. Again spread the dressing over it. Mix it gently and then serve it when the salad gets chilled.

Parwal Sweet Recipe

Ingredients
Khoya (450gms), Parwal (500gms), whole milk powder (50gms), almonds (10), sugar (250gms), cardamom powder (1/4tsp), green pistachios (10), saffron strands.

Method of preparation:-
parwal-sweet-recipeTake a mixie, crush pistas and almonds in it. Take parwals, take off the skin and then slit them lengthwise. Put them in the boiling water and then cook them for about 2 to 3 minutes. When the parwals get cooked then drain the water. Now roast the khoya in a pan until it turns lightly pink in color by stirring it. Take off the pan and keep it to cool. Add cardamom, pistas, crushed almonds, milk powder and saffron in it and mix it well. Fill this mixture into each parwal. Take a pan, add water and sugar in it. Keep it to boil until the syrup gets 1 thread consistency. Pour this sugar syrup into the parwals and cook it for about 2 minutes. Now take out the patwal from the syrup and keep on the mesh. Keep it to cool and cover it with silver foil. Now the sweet is ready to serve.

Gaund Ka Laddoo Recipe

Ingredients
Gram flour (2c), sugar (1c), gaund (3/4c), ghee (1c), badam (1/2c), green elaichi powder (1tsp).

Method of preparation:-
gaund-ka-laddooTake dry gaund and break it into small pieces. Take a mixer, grind badam in it. Sieve the gaund to separate the powdered gaund. Take a pan, heat ghee in it and fry the gaund in it. After frying the gaund gets puffed. Take it out from ghee and keep it aside. Now add gram flour to the ghee in the pan and roast it for about 10 to 12 minutes by stirring it on low heat. When the flour turns golden brown in color then adds badam and the powdered gaund in it. Mix it and then add puffed gaund, sugar, elaichi powder. Mix it well and then keep the mixture to cool slightly and then make laddoos. Serve these laddoos as sweet dish.

Rajasthani Malpua Recipe

Ingredients
Wheat flourn or gehun ka atta (1 cup coarsely ground), milk (1/2c), fennel seeds (1tbsp), beaten curd (1/4c), sugar (1/2c), crushed peppercorns (10), ghee or vegetable oil (for frying), chopped pistachios (2tsp for garnishing).

Method of preparation:-
rajastani-malpuaTake a large bowl, add all the ingredients in it. Then add about 1 ½ cup of slightly warm water in the bowl. Mix it well to make smooth batter. Keep the bowl aside for about 40 to 45 minutes. Take a kadai; place it over heat and heat ghee or oil in it. Now pour the batter of 1 tablespoon in the hot oil and fry it until it gets golden brown from both sides over medium heat. Drain the malpua and place on paper towel to absorb the excess oil. Make more malpuas in the same way. Decorate them with chopped pistachios and serve them hot.
Makes about 20 malpuas

Mawa Misri (Reduced Milk With Crystal Sugar) Recipe

Ingredients
Condensed milk (250gms), whole milk (1litre), ghee (10gms), cardamom powder (5gms), crystal sugar (50 gms), sliced almonds (50 gms), sugar (50 gms).
For Garnish: – Silver leaf (2 sheets).

Method of preparation:-
mawa-misri-reduced-milk-with-crystal-sugarTake a pan, grease it with ghee. Add milk in it and keep it to boil. Keep the milk to boil by stirring it until it gets reduced to half. Now add condensed milk in it and cook it by stirring it. Prevent it from sticking to the base of the pan. Cook it until it gets reduced to 1/4th of its original quantity. Then add sugar, cardamom and almonds in it and cook it for about 5 minutes. Now take off the pan from heat and keep it to cool. Now add crystal sugar in it and mix it properly. Keep it in the refrigerator. Garnish it with silver leaf before serving it.

Rajasthani Churma Laddoo Recipe

Ingredients
Khoya or Mawa (100gms), wheat flour (200gms), cardamom (4 small), ghee (400gms), grounded sugar (200gms), Dalchini (1 inch), finely chopped soaked almonds (50 gms).

Method of preparation:-
rajasthani-churma-laddooTake wheat flour in a bowl; add the melted ghee of 150 grams in it. Add little water and mix the flour to make dough. Take a kadai, place it over heat. Heat the left over ghee in it. Make the small balls of dough and fry them in hot oil over low heat until they turn golden brown in color. Drain and keep them to cool and then churn them in a grinder. Mix khoya in it. Heat ghee of 1 tablespoon in kadai, add dalchini, cardamom seeds and khoya and flour mixture in the kadai. Fry the mixture for about 1 minute and then keep it to cool. Add chopped almonds and sugar in it. Mix it well. Make laddoo of churma and serve them in plate with dal and baati. Store the churma laddoo in airtight container and enjoy them for 8 to 10 days.
