Churma Recipe
Ingredients
1. Wheat flour (200gms)
2. grounded sugar (200gms)
3. ghee (400gms)
4. khoya (100gms)
5. soaked almonds, finely chopped (50gms)
6. cardamom (4small)
7. dalchini (1”piece)
Method of preparation:-
1. Take a pan, melt ghee in it and then mix it in the wheat flour. Make a stiff dough of this by using very little water.
2. Take a kadai, heat the remaining ghee in it. Make about 15 to 20 balls of the dough. Fry them in hot ghee on low heat until turn golden brown in color.
3. Now churn the fried balls of dough in a grinder after they cool down. Mix khoya in it. Now heat 1 tablespoon of ghee in kadai. Add dalchini and cardamom seeds in it. Add this to wheat flour and khoya. Fry it for about 1 minute.
4. When it cools down then add sugar and chopped almonds. Mix them properly. Serve the churma in a plate. Keep it in airtight container and enjoy it for about 8 to 10 days.

Cham Cham Bengali Dessert Recipe
Ingredients
For the dumplings:
1. Regular cream of wheat (1tsp)
2. chopped unsalted raw pistachios (10-12)
3. fresh cheese
For the syrup:
1. Sugar (1c)
2. water (4c)
3. flavoring dash of rose water (optional)
Method of preparation:-
1. Take fresh cheese, make sure that it is well drained; too much moisture may cause the dumplings to crack as they cook. Place the drained and well kneaded cheese on the board.
2. Then sprinkle the cream of wheat evenly over the cheese and knead it again. Now keep it aside for few minutes.
3. Prepare the dumplings:- Take a pinch portion of the dough and roll it into balls for about 1 inch in diameter. Gently insert your finger halfway into each ball, place 1to 2 pistachios bits indentation and reshape in into a smooth ball. Flatten the ball into an oval shape about 2 inches long and ¾ inches thick.
4. Make syrup:- Take a deep pan, boil water and sugar in it. Boil it for 10 minutes and then reduce the heat. Place each ball on a spoon and gently lower it into the syrup. Cover the pan; keep it to simmer for about 1 hour.
5. Take a large bowl; place the cham- cham and remaining syrup in it. Keep it to cool and then place it in the refrigerator for several hours. Sprinkle the rose water and decorate it with pistachios.

Til Burfi Recipe
Ingredients
1. Sesame seeds (3c)
2. groundnuts or peanuts (1c)
3. sugar (2 1/2c)
4. grated dry coconut (1/2c)
Method of preparation:-
1. Take a pan, roast sesame seeds in it until good aroma comes out from the seeds and then keep it aside. Then roast the groundnuts. Grind the roasted groundnuts finely but grind the roasted sesame coarsely. Mix them together.
2. Take a thick bottomed pan, make thick sugar syrup in it. Mix the powdered groundnuts and sesame seeds in the syrup. Stir it continuously until it no longer stick to the edges.
3. Take a tray, grease it with oil and then spread the hot mixture on to a greased tray to about quarter inch thickness. Sprinkle the grated dry coconut on the top and let it cool for 2 hours. Cut it into square or diamond shapes.

Mango Mania Recipe
Ingredients
1. Fresh milk (500ml)
2. sugar (3c)
3. GMS (1tsp)
4. CMC (1tsp)
5. mashed mango (1c)
6. china grass (1tsp)
7. fresh cream (1c)
8. custard powder (1tsp)
Method of preparation:-
1. Take a pan, heat fresh milk in it until it boils down to half of the original quantity.
2. Take a small bowl, add 2 teaspoon of warm milk and custard powder in it. Mix it well to make a paste. Add this paste to the boiling milk. Add sugar along with GMS and CMC. Add China grass and immediately remove from the flame. Keep it to cool.
3. When it cool down then add fresh cream and the mashed mango. Put it in a mixer and beat well. Keep it in the freezer for about 9 to 10 hours during which it should be taken out thrice at intervals of about 3 hours and again beaten it in the mixer.
4. After beating it for the third time, keep it to deep freeze in the desired molds until it is ready to serve.

Dates and Dry Fruits Burfi Recipe
Ingredients
1. Deseeded Khajur or dates (1kg)
2. dessicated dry coconut (1/2c)
3. condensed milk (1tin)
4. mixed dry fruits (250gm)
Method of preparation:-
1. First take dates and break up them coarsely.Take a heavy non stick pan; add condensed milk and dry fruit all in it. Place the pan on low heat and cook it by stirring it continuously. Avoid it to stick to the bottom of the pan. Cook it for a while and stir it gently until a soft lump is formed.
2. Take a butter paper sheet; spread some of the coconut on it. Apply oil on your hands and then take a chunk of the mixture and then roll it on the sheet, all the coconut to cover it.
3. Place the rolls in the refrigerator to chill. When the rolls get chilled then cut them into slices with a knife. Place these slices in a serving tray and serve them.

Sweet Corn Soup Recipe
Ingredients
1. Corn (1)
2. finely chopped spring onion (2)
3. vegetable stock (as required)
4. cinnamon clove (1)
5. cardamom clove (1)
6. green chilli (4)
7. tomato (1)
8. onion (1/2)
9. pepper (2tsp)
10. tomato sauce (5tsp)
11. salt and sugar (to taste)
Method of preparation:-
1. Make a paste of tomato, onion and green chili. Take a vessel, add the required vegetable stock in the vessel and then add the ground paste in the vessel.
2. Take a cloth and put the spices and make that into a small bag. Put the corn in the vessel and keep them to boil for about 20 minutes. Then put the sugar, salt and pepper and the spring onion and then mix them. Now add the tomato sauce. Mix it well.
3. Take out the vessel from the heat and then remove the spice bag. Now the soup is ready to serve. Pour the soup in the soup bowls and serve it hot.

Plum Jam Recipe
Ingredients
1. Plums (10med.)
2. water (1/3c)
3. lemon juice (2tbsp)
4. honey (2tbsp)
5. sugar (1/3c)
Method of preparation:-
1. Take plums, wash them and then take out the stone from the plums. Chop them roughly. Take a saucepan; put the chopped plums, water, sugar and the lemon juice in the pan.
2. Place the pan on heat and then keep them boil. When it starts boiling then reduce the heat to low but keep on boiling by stirring. Mash the plums with the back of the spoon. Cook it for about 15 minutes until the mixture gets thicken.
3. Now take off the pan from heat, add honey in it and then mix it well. When the jam gets ready then keep it to cool to room temperature before it is filled in the glass bottle or jars.

Mango And Papaya Jam Recipe
Ingredients
1. Mango pulp (2c)
2. Peeled, cut and pureed papaya (1med.)
3. sugar (4 1/2c)
4. lemon juice (6tbsp)
Method of preparation:-
1. Take a wide pan, put the mango puree and papaya puree in the pan and cook it for about 3 to 4 minutes. Add sugar and cook it until the sugar gets dissolves. Now add half of the lemon juice and cook it until the mixture gets thicken.
2. Take a spoonful of cooked jam on a plate and keep it to cool. If the jam sets on cooling and there is no water separation then the jam is ready. But if there is any water separation on the plate then again cook it until it gets ready.
3. Now pour the jam into a sterilized bottle while it is hot. Keep it to cool completely and then seal it with tight fitting lid and store it.

Roasted Almonds And Beetroot Jam Recipe
Ingredients
1. Grated beetroots (4med.)
2. sugar (2 1/4c)
3. lemon juice (6tbsp)
4. grated ginger (1 ½ inch piece)
5. blanched, silvered and roasted almonds (10-15)
Method of preparation:-
1. Take a pan, heat it and add grated beetroot with half a litre of water and half of the lemon juice. Cover the pan and cook it until the water gets evaporated. Pass this mixture through the soup strainer.
2. Take another pan, put the strained pulp in it and then add sugar and grated ginger, mix it well. Add the remaining lemon juice, mix it and then cook it. Discard any scum rises on the top. Cook it until the mixture gets thickens.
3. Take a spoonful of cooked jam in a plate and keep it to cool to check if it is ready or not. If the jam sets on cooloing and there is no water separation then the jam is ready. But if there is any water separation then cook it again until it gets ready.
4. Now add the roasted almonds slices and mix them. Pour the jam, while still hot into the sterilized container. Keep it to cool completely and then cover it with tight fitting lid and store it.

Baadhusha Recipe
Ingredients
1. Maida (100gms)
2. sugar (150gm)
3. ghee (100gms)
4. baking soda (a pinch)
5. salt (a pinch)
6. oil for frying
7. grated coconut (for decoration)
Method of preparation:-
1. First make the sugar syrup. Take a pan, Mix sugar with equal amount of water in the pan. Place the pan over heat and cook it for about 5 minutes.
2. Then add ghee, a pinch of baking soda, a pinch of salt and mix it until the bubbles appear. Now add maida in it and mix it by sprinkling water so that it becomes soft.
3. Take off the pan from heat and keep it to cool. Now make the uniform balls of this mixture and then flatten it lightly on both sides. Deep fry the in the hot oil .
4. When they get fried from both the sides then drain then from the oil and immediately put them into the sugar syrup. Keep in the syrup for 5 minutes and then place them on the plate.
5. Make more baadhushas of remaining mixturein the same way. Decorate the top with the grated coconut and then serve the baadhusha.
