Moong Dal and Spinach Recipe
Ingredients
1. Yellow moong dal (2/3c)
2. chopped spinach (250gms)
3. sliced tomatoes (2large)
4. chopped onion (1)
5. finely minced garlic cloves (4large)
6. minced ginger (1tsp)
7. coriander powder (1tsp)
8. cumin powder (1tsp)
9. turmeric powder (1tsp)
10. lemon juice (1tsp)
11. garam masala powder (1tsp optional)
Method of preparation:-
1. First cook the dal with 3 cups of water. Take a saucepan, heat oil in it and then add cumin seeds. Fry the seeds for a minute and then add sliced onions, minced garlic, minced ginger, coriander powder, cumin powder, garam masala powder, the chopped spinach leaves and sliced tomatoes in the pan.
2. Cook them by stirring constantly on medium low heat. Now add the cooked dal with another 3 cups of water and turmeric powder in the pan. Cook until the mixture starts boiling.
3. Add salt according to taste and lemon juice in the pan. Now turn off the heat and take off the pan from the heat. When it gets ready then serve it hot with chapatti.

Green Moong Dal Recipe
Ingredients
1. Green moong dal (2/3c)
2. cumin powder (1tsp)
3. coriander powder (1tsp)
4. turmeric powder (1tsp)
5. coriander powder (1tsp)
6. garam masala powder (1tsp)
7. minced ginger (1tsp)
8. finely minced garlic cloves (4large)
9. sliced tomatoes (2large)
10. salt (2tsp or to taste)
Method of preparation:-
1. First cook the green moong dal with 3 cups of water. Take a saucepan, heat the oil in it. Fry cumin seeds in the oil for a minute and then add chopped onion, minced garlic, minced ginger, cumin powder, coriander powder and garam masala powder and sliced tomatoes.
2. Cook them by stirring them constantly on medium low heat for about 10 minutes. Now add the green moong dal in the pan with another 3 cups of water and turmeric powder.
3. Cook it until it gets boiling and then add the salt according to taste. Now turn off the heat and take out the pan from the heat. Garnish it with chopped coriander leaves and serve it with rice or chapatti.

Ingredients

2. Cook them by stirring constantly on medium low heat for about 10 minutes. Add dal in the pan with another 3 cups of water and the turmeric powder. Cook it until the mixture starts boiling and then add salt in it.
3. Now turn off the heat and then garnish the dal immediately with sliced tomatoes and chopped coriander leaves. When it gets ready then serve it in serving bowl with boiled rice or chapatti.

Curried Garbanzo Beans Recipe
Ingredients
1. Garbanzo beans (8oz)
2. garlic (12cloves)
3. ginger (2” piece)
4. cloves (6)
5. cinnamon stick (1”)
6. cardamom (4large)
7. green chili (to taste optional)
8. pepper (to taste)
9. oil (4oz)
10. onions (3)
11. mango powder (1tsp)
12. tomatoes (4)
13. dried pomegranate seeds (1tsp)
14. paprika (1tsp)
15. salt (to taste)
Method of preparation:-
1. Take beans, clean, wash and then soak in water for overnight. Next day boil them in the same water with salt, pepper, green chili, 1small chopped onion, 4 cloves of garlic, 4 large cardamom, cinnamon, 1” piece of ginger and 6 cloves. Now cook on simmer in a pan for an hour until the beans get tender.
2. Take a pan, heat oil in it and fry thinly sliced remaining onion and the cloves of garlic. Cook until the onion gets brown then add the chopped tomatoes and cook for 4-5 minutes. Add the beans and cook for 10 minutes.
3. Add the dried pomegranate seeds, mango powder, paprika and grated ginger and cook it on simmer for 15-20 minutes over low heat. When the beans get ready then serve it by adding ghee over the beans.

Vegetable Korma Recipe
Ingredients
1. Beans (1c)
2. potato (1)
3. ground coconut (1/2c)
4. peas (1/2c)
5. carrot (1/2c)
6. ginger (small piece)
7. onion (1)
8. garlic flakes (3)
9. cumin seeds (1/2tbsp)
10. chilli powder (1/2tbsp)
11. lime (1/2)
12. coriander (few leaves)
13. coriander powder (1tbsp)
14. turmeric powder (1/2tbsp)
15. oil (1tbsp)
16. salt (to taste)
Method of preparation:-
1. Take a pan, heat the oil in it. Add sliced onion and fry then until turn to light brown. Then add cumin seeds, ginger, garlic, chilli powder, turmeric, coriander powder, salt and fresh coriander leaves. Fry it nicely.
2. Then add the vegetables and pressure cook them until they are cooked. When the vegetables get cooked then add little water and the ground coconut.
3. Reduce the heat and keep it to simmer for 5 minutes. Now squeeze the lime to it and the vegetable korma gets ready. Serve it hot with the chapati.

Aloo Mutter Recipe
Ingredients
1. Green peas (1c)
2. green chillies (2)
3. green coriander leaves (1/2c)
4. potatoes (3med.)
5. garlic (1pod)
6. tomatoes (2med.)
7. onion (1small)
8. turmeric powder (a pinch)
9. salt (to taste)
10. oil (1to2tbsp)
Method of preparation:-
1. Take a blender, put garlic, tomatoes coriander leaves, chopped onion, green chillies, turmeric powder and salt in it. Grind all these ingredients to make the ground masala.
2. Now heat the oil in the cooker, add the ground masala in the cooker and roast it until the oil gets separate. Add the cut potato pieces and green peas and then mix them well.
3. Add one cup of water in the cooker and pressure cook them until 2-3 whistles. When the dish gets ready then garnish it with chopped coriander and serve it with chapati or rice.

Onion Rice Recipe
Ingredients
1. Rice (1c)
2. green peas (1/2c)
3. onion (1 med.)
4. garlic (a little)
5. minced green chillies (3)
6. chopped coriander leaves
7. mustard and cumin seeds (for seasoning)
8. salt (to taste)
9. oil (2tbsp)
Method of preparation:-
1. Take a onion, cut it into thin long slices. Take a pan, add rice with water in it and keep for boiling.
2. Take another pan, heat oil in it and season with cumin seeds and the mustard seeds. Now add the sliced onions and green chillies in the pan.
3. Fry them until the onions turn light brown in color and then add the green peas. Pour little water in the pan and keep the mixture to boil until it becomes dry. Now ad the boiled rice in the pan.
4. Mix the rice with the onion and peas mixture. Add the chopped coriander leaves and mix well. When the onion rice get ready then serve them hot in the serving dish and enjoy them with curry or curd.

Baingan Fry Recipe
Ingredients
1. Baingan (1large)
2. red chillies powder (3tbsp)
3. besan or gram flour (2tbsp)
4. peanut oil (1/4c)
5. salt (to taste)
6. turmeric (1tsp)
Method of preparation:-
1. Take a large baingan, wash it, dry it and then cut it into thin round slices. Take a bowl, mix the besan, chilli powder, salt and the turmeric powder in it. Mix all the ingredients thoroughly.
2. Take a frying pan, place it over over heat. Heat the peanut oil in it. Take one thin slice of baingan at a time and apply the mixture on both the sides of it.
3. Now put the baingan slice in the hot oil for frying. Fry more baingan slices in the same way and then serve hot with chapattis.

Pepper Rasam Recipe
Ingredients
1. Chopped tomatoes into small cubes (1small)
2. cumin seeds (1tsp)
3. curry leaves (1sprig)
4. sugar or jaggery water (1/2tsp)
5. peppercorns (1 1/2tsp)
6. mustard seeds (1tsp)
7. thick tamarind juice (2tsp)
8. chopped coriander leaves (1tsp)
9. hing (a pinch)
10. ghee (2tsp)
11. water (6c)
12. salt (to taste)
Method of preparation:-
1. Make the coarse powder of the peppercorns in the peppermill or in the coffee grinder. Take a pan, put the peppercorn powder with water, tomato, salt, pepper, sugar and the tamarind juice in the pan.
2. Place the pan over low heat and keep it to boil. Prepare the seasoning in the ghee with mustard seeds, cumin seeds, curry leaves and hing.
3. Put this seasoning in the peppercorn mixture and then mix it well. When it gets ready then garnish it with the chopped coriander and serve it hot with plain rice.

Ingredients
1. Cubed and boiled vegetables like beans, carrots, potatoes, raw banana, cauliflower (2c)
2. green chillies (4-5)
3. buttermilk (3/4 packet)
4. cumin seeds (2tsp)
5. shredded coconut (2tbsp)
6. turmeric (1/2tsp)
7. cooking oil for seasoning (3tsp)
8. finely chopped fresh coriander leaves (1tbsp)
9. salt (to taste)
10. mustard seeds (1tsp)
11. hing (a pinch)
12. curry leaves
13. red chili powder (1/2tsp)
Method of preparation:-
1. Take buttermilk in a pan, add salt, turmeric, coconut paste and the boiled vegetables in the buttermilk. Place the pan over low heat and then cook the buttermilk mixture until it becomes thick in texture. Keep it stirring continuously while cooking. When it gets ready then add the chopped coriander leaves and shredded coconut.
2. Take a pan, heat oil in it to prepare the seasoning. Add mustard seeds, hing, curry leaves, red chillies, and cumin seeds in the hot oil. Fry them until the seeds get splutter. Now add this seasoning into the buttermilk mixture.
