Kashmiri Pulao Recipe
Ingredients
Basmati rice (1/2kg), cream (3 1/2c), sugar (1tbsp), cloves (2-3), cardamom (3/4), cumin seeds (1/2tbsp), cinnamon (1 inch piece), bay leaf (1), ghee (2tbsp), chopped and mixed fruits (1c),milk (2c), rose water and salt (to taste).
Method of preparation:-
Take rice, wash and soak in water for about 10 to 15 minutes. Take a pan, heat ghee in it. Add the cloves, cumin seeds, cinnamon, cardamoms and bay leaf in the pan and fry them until there is good fragrance. Add soaked rice and fry them for 2 minutes. Add mixture of cream, milk, sugar and salt and then stir it properly. Add water, cover the pan and keep it to simmer until the rice gets cooked. When the rice gets cooked then mix the chopped mixed fruit. Serve the biryani hot by sprinkling few drops of rose water over the rice.
