Cream Of Mushroom Soup Recipe

Ingredients
Maida (4tbsp), tejpatta (4), crushed garlic cloves (2), chopped onion (2small), fried onion crisp (40gms), lemon juice (2tsp), butter (4tsp), salt (1tsp), milk (400ml), cream (100ml), chopped parsley leaves (a few), button mushrooms (200gms), black pepper powder (1tsp) and salt (1tsp).

Method of preparation:-
cream-of-mushroom-soupTake a pan, heat butter in it and then add the chopped onion and garlic and fry them until get soft. Take half of the mushrooms, chop them and then add them into the oil and fry them for about 5 minutes. Mix the flour by stirring well. Cook it for about 5 minutes. Gradually add the vegetable stock and then keep it to boil. Add the tejpatta, black pepper and salt and keep it to simmer for 20 to 25 minutes. Sieve it. Otherwise liquidize it in blender and strain it. Now take the remaining mushrooms and then finely chop them. Add them along with milk. Keep it to boil and then simmer it on low heat for about 15 minutes. Add the cream and the lemon juice and then again heat the soup but do not boil it. Garnish the soup with fry’s onion rings and chopped parsley. Now serve it hot.
